Something personal. By this stage you should know her pretty well.
It's my boyfriend and I's 2 year anniversary next month and we're probably going to get a Nintendo Wii together :D
For our one year anniversary I got him a PS2 and GT4 and he got me a Wacom Intuos 3 Tablet. We're nerds and we both LOVED our presents!
Our anniversary is exactly a week before Christmas so we combine the two events!
I think jewelry is always a winner. Maybe something like a Promise Ring with something sweet engraved on the inside of the band? Necklaces are also wonderful.
Try to make it as personal as possible. Write her a letter telling her how you feel about her. Organize a wonderful romantic day for her (it doesn't necessarily have to be expensive just thoughtful)

the perfect gift is 2 take her out 2 a popular restuarant the n go 4 a walk along the beach and give her an "I luv u" teddy so sweet

Perfume, a ring, OR flowers I say. Maybe take her somewhere for lunch or dinner. It doesnt matter what you do, it will all be special to her on your one year.

i gave her a simple ring with her birthstone on it... not yet an engagment ring.... but it was a great gift she received from me.... then i took her to our house and introduced her to my parents as my "official" girlfriend....... you can do it too...by the way.. we are together for four long years now...... we dont have any plan to settle down yet but our relationship is still growing every minute.....actually she's sitting next to me while im answering your question.... thats why i can asked her if she was happy or not..... and she answered.. difinitely!!!!
