CANNED TUNA WITH PEAS

2 tbsp. oil
1 med. onion, sliced
1 tbsp. parsley
1 tbsp. tomato sauce
2 c. peas
2 med. cans tuna fish
1/2 tsp. pepper
1/4 tsp. salt
1/4 tsp. oregano

Heat oil in pan, add onion and parsley and brown. Add tomato sauce, peas and enough water to cover and cook 10 minutes or until peas are tender. Add tuna to mixture and cook 5 minutes over low flame. Add pepper, salt and oregano. Cook 5 minutes longer and serve. Serves 4.

Have you tried Tuna Potatoes they are like twice baked potatoes here is how I make them. Bake about 8 medium potatoes until done about 1 1/2 hours or until fork tender. Cut in half lengthwise and scoop out the potatoe meat put into a bowl and save the empty shells on a baking pan mash up the potatoes then add 2 cans of tuna drained, 1 onion finely chopped, enough mayonnaise to moisten the potatoes, 1 1/2 cups cheddar cheese and 1 chili pepper if you like spicy food. Mix it all together well and with a spoon scoop it back into the potato shells then bake for about 45 minutes at 350 or until light brown. My kids loved them when they were little and still ask for them now that they are older. They are great as a snack or a meal.

While growing up, my mom used to make Tuna cakes (tuna, bread crumbs, seasonings, egg to hold together....fried in a bit of oil). Here's an even tastier version we tried recently:

BBQ Tuna Fritters

Prep Time: 5 Minutes
Cook Time: 20 Minutes Ready In: 25 Minutes
Yields: 2 servings

"A fun way to make canned tuna taste less like canned tuna. These thin tuna patties are tasty enough to be eaten plain or in a pita pocket with lettuce and tomato."

INGREDIENTS:
1 (6 ounce) can light tuna in
water, drained
1 egg
2/3 cup quick-cooking oats
3 tablespoons barbeque sauce
3 tablespoons chopped green onion
1/2 teaspoon hot pepper
sauce, or to taste
1/2 teaspoon dried savory
1 pinch salt
2 tablespoons vegetable oil

DIRECTIONS:
1. In a medium bowl, stir together the tuna, egg and oats until blended. Mix in the barbeque sauce, green onion, hot pepper sauce, savory, and salt.
2. Heat the oil in a large skillet over medium heat. Spoon tablespoonfuls of the tuna mixture into the pan, and flatten slightly. Smaller patties hold together better. Cook until browned on each side, about 3 minutes per side.

Sweet and Sour Pasta

INGREDIENTS
1 onion, chopped
1 leek, chopped
1 small carrot, grated
1 (6 ounce) can tuna
1 (16 ounce) can crushed tomatoes
2 tablespoons olive oil
2 tablespoons honey
2 tablespoons light soy sauce
1 tablespoon Worcestershire sauce
1 1/2 teaspoons Chinese five-spice powder
2 tablespoons creme fraiche
1 (16 ounce) package penne pasta
DIRECTIONS
Cook penne pasta in boiling salted water until al dente.
Place the onion, leek, and carrot in a saucepan with the olive oil and saute for a few minutes until the onions become translucent.
Place the tomatoes, honey, soy sauce, Worcestershire sauce and Chinese five spice into the saucepan and cook on medium heat for 5 minutes.
Add the drained tuna fish and cook for a further 5 to 10 minutes.
When you are ready to serve, season with salt, stir in a few spoonfuls of creme fraiche and pour the sauce over the cooked penne.

GARDEN TUNA SALAD

1 6-ounce can water-packed tuna, drained, flaked
1 large tomato, chopped
1 medium cucumber, peeled, seeded, chopped
1 small red bell pepper, chopped
1/2 cup chopped green onions
2 celery stalks, chopped
4 ounces (about 1 cup) small shell pasta, freshly cooked
6 tablespoons (or more) prepared ranch-style salad dressing
3 tablespoons chopped fresh dill or 1 tablespoon dried dillweed



Combine first 6 ingredients in large bowl. Mix in pasta. Add dressing and dill and blend well. Season salad to taste with salt and pepper. (Salad can be prepared 2 hours ahead. Cover and refrigerate.) Adjust salad with more dressing if desired and serve.

Serves 4.

From my mom's kitchen - tuna, noodles, and peas. It's easy one pan on the stove. Boil some egg noodles, add a couple cans of tuna, a couple cans of either cream of chicken or mushroom soup, and a can of peas. Throw in some spices that you've got in the cupboard. It takes just a few minutes and no mess.

Tuna a-la-King
1 can tuna drained
2 Tbs butter
2 Tbs flour
1 c milk
sweet peas (canned or frozen) drained
Make a white sauce with butter and flour by melting butter then add flour and saute' until smooth, add milk and cook over low heat until slightly thick then add tuna and peas and cook until thoroughly heated. Server over toast or biscuits.

I love tuna. Tuna pasta is good. Put the tuna on cooked pasta, there are pasta sauces like tomato and chili and cheese and silverbeet, and cover in breadcrumbs and bake. Also canned tuna in taco shells with taco sauce and cheese under the griller is tasty.

Not just any Tuna Salad

Tex-Mex Tuna Salad

Ingredients

2 cn Solid white tuna in water, drained and flaked (6.5 oz)
1/2 c Sliced ripe olives
1/2 c Sliced green onions w/tops
1/2 c Thinly sliced celery
2/3 c Pace Picante Sauce
1/2 c Dairy sour cream
1 ts Ground cumin
Lettuce leaves OR
Shredded lettuce
12 Taco shells OR
3 c Tortilla chips

Instructions

Combine tuna, olives, green onions and celery in medium bowl. Combine Pace Picante Sauce, sour cream and cumin; mix well. Pour over tuna mixture; toss lightly. To serve, line taco shells with lettuce leaves; spoon tuna mixture into shells. Or, line individual serving plates with shredded lettuce; top with tuna mixture and surround with tortilla chips. Drizzle with additional Pace Picante Sauce; top with additional sour cream, if desired.

If that doen't work make a roux with flour amd butter add a can of tuna and add 1 1/2 C milk stir over medium heat for creamed tuna and serve it over toast
