Baked Sweet Potatoes with Marshmallows
MAKES: 6 servings
PREP: 10 minutes
BAKE: 1 hour 5 minutes
6 small sweet potatoes (about 4 pounds)
2 tablespoons unsalted butter
Sea salt, to taste
Freshly ground pepper, to taste
1 cup miniature marshmallows or 10 to 12 large marshmallows (cut into quarters)
Preheat oven to 400°. Wash and scrub potatoes, and wrap
individually in foil while still slightly damp. Place potatoes
directly on oven rack; bake at 400° for about 1 hour or until
tender. Remove from oven; allow to cool slightly before removing
foil.
Cut a 3-inch slit in top of each potato, and push together at both ends. Add about 1 teaspoon butter to each, and press down into flesh of potatoes. Add sea salt and pepper; top each with 5 to 6 miniature marshmallows. Place on a baking sheet, and bake at 400° for 5 to 8 minutes or until marshmallows are golden brown and slightly melted. Serve warm with additional butter, if desired.

*Baked Yams*
4 yams
1 tablespoon shortening
Many people think that yams and sweet-potatoes are the same thing. Actually, sweet-potatoes may be grown nearly anywhere in the country, while Yams are tropical and generally are grown in warmer regions of the country.
For easy baked yams that go well with a Christmas ham, rip off four sheets of aluminum foil, just big enough to wrap the yams. Smear shortening (you can also use bacon grease for this operation) all over the yam and wrap tightly in the foil.
Bake yams in 375 degree oven for about 1 hour. They can probably safely cook for considerably longer, if necessary or desired.
You may also try wrapping each yam in a strip of bacon. Be careful how you wrap the yam, make sure that any openings are toward the top. Place a pan on the rack below to catch any dripping. If you stab the tuber to test for doneness expect some bacon grease to drip.

BAKED YAMS WITH CINNAMON-CHILI BUTTER
1/2 cup (1 stick) unsalted butter, room temperature
1 tablespoon plus 2 teaspoons New Mexico chili powder*
1 tablespoon ground cinnamon
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
6 yams (red-skinned sweet potatoes)
Using electric mixer, beat first 5 ingredients in medium bowl until fluffy. (Can be made 3 days ahead. Cover and refrigerate. Bring to room temperature before using.)
Preheat oven to 400°F. Line large baking sheet with foil. Place yams on sheet; bake until tender, about 1 hour 10 minutes. Slit each yam lengthwise. Spoon 1 tablespoon butter into each. Serve, passing remaining butter separately.
* A pure chili powder, sold in the spice section of some supermarkets. If unavailable, substitute an equal quantity of regular mild chili powder.
Makes 6 servings.

Micro-waved yams will not get soft and drip sugar like oven baked. It is worth it to have the forethought and throw them in the oven. I keep a batch of yams in the refrigerator. They are so good cold that they are perfect for a "grab and go" kind of meal or snack.
BASIC BAKED YAMS
Ingredients
Yams, whole, scrubbed and unpeeled
Steps
Make sure to pierce the skins with a knife or fork in several places. Bake the yams at 375°F directly on a rack in the center of the oven. No need to preheat. In order to save clean up from dripping yam syrup, place foil on a rack below the rack with the yams. Bake until very soft and dripping with syrup, about 1 1/2 hours. If the yams are soft but not dripping, they are not done.
CANDIED YAMS
1/2 cup flour
1/2 cup quick-cooking oats
1/2 cup packed brown sugar
1 teaspoon cinnamon
1/3 cup margarine
2 (12 ounce) cans yams (drained)
2 cups cranberries (optional)
1 1/2 cups marshmallows
Combine Flour Brown Sugar, Oats and Cinnamon In Bowl.
Cut In Margarine Until Crumbly.
Mix 1 Cup Oat mixture with Yams and Cranberries in 1 1/2 Quart Casserole Dish.
Top With Remaining Mixture.
Bake at 350 . 30 to 35 Minutes.
Sprinkle Marshmallows on top and Continue Baking Until Lightly Browned.

Baked Yams
RECIPE INGREDIENTS:
5 to 7 yams, microwaved
Milk
Margarine
1/2 to 3/4 cup raisins
2 Mcintosh apples, sliced
Sugar
Cinnamon
Method:
Preheat the oven to 350 degrees.
In a bowl, mash yams with milk, margarine and raisins.
Place a layer of yams in a greased Pyrex pie plate.
Add a layer of sliced apple, and sprinkle lightly with sugar and cinnamon.
Dot with more margarine.
Repeat layering of yams, apple, sugar, cinnamon and margarine, and finish with a cover of yams.
Dot surface with margarine.
Bake for approximately 1 hour.
Makes 4 to 6 servings.

This yam dish is EASY, DELICIOUS, and makes a BEAUTIFUL PRESENTATION! I ALWAYS get requests for these YAMS!!
Peel as many yams as you like.
Once peeled, slice yams like you would slice a banana, into discs about 1 inch thick.
Place discs flat on baking sheet sprayed with PAM or other non-stick cooking spray.
Dot each yam disc with butter.
Sprinkle yams generously with brown sugar.
Coursley crumble one cup fresh walnuts over top of yams.
Bake at 350 degrees for approximately one hour or until tender when you poke a fork into them.

Cut up about 2 sweet potatoes. Wash it. Put it in a saucepan. add enough water to cover the bottom of the saucepan. Add about a cup and a half of sugar, 1 tablespoon of real butter (yes it matters), a teaspoon of vanilla and a dash of nutmeg. Perfect every time. Let it cook until the sugar melts completely. Stir occasionally. I love yams. The trick is the vanilla. I don't know what that does to them, but it makes them delicious.

Microwave the yams. Mash them. Add enough whipping cream or half and half to make mashed potato consistancy. Add brown sugar and a patt of butter on top. YUM and soooo EASY.

I JUST ADD BROWN SUGAR AND SYRUP TO MINE AND PUT IN THE OVEN. THE LAST 5 MIN. TAKE OUT AND ADD YOUR MARSHMALLOWS TO THE TOP AND PUT BACK IN THE OVEN TO BROWN. GOOD.
