I love Rum Cake and made some coconut rum chocolate chips cookies YEARS ago. Does anyone have any suggestions?

Bacardi Rum Cake

Cake:
1 cup chopped, toasted pecans or walnuts
1 18-1/2 ounce yellow cake mix
1 1-3/4 ounce instant vanilla pudding mix
4 eggs
1/2 cup cold milk
1/2 cup vegetable oil
1/2 cup Barcardi dark rum
Glaze:
1 stick butter
1/4 cup water
1 cup sugar
1/2 cup Barcardi dark rum

Cake: Preheat oven to 325 degrees F. Grease and flour 12-cup Bundt pan. Sprinkle nuts on bottom of pan. Combine all cake ingredients. Beat for 2 minutes on high with electric mixer. Pour into prepared pan. Bake for 1 hour. Cool in pan. Invert on serving plate. Prick top with fork. Drizzle glaze over top of cake. Use brush or spoon to put extra dripping back on cake.

Glaze: Melt butter in saucepan. Stir in water and sugar.

Boil 5 minutes, stirring constantly. Remove from heat and stir in rum. Note: The rum will cause steam. Be careful not to burn yourself.

Chocolate chip and coconut rum cookies

1 c All purpose flour
1/4 c Granulated sugar
2 tb All purpose flour
1 Large egg, lightly beaten
1/4 ts Salt
3/4 ts Vanilla
1/2 ts Baking soda
3/4 ts Light rum
6 tb Unsalted butter,
softened
1/2 c Grated coconut
1/2 c Packed light brown sugar
1/2 c Semi-sweet chocolate chips

Preheat oven to 375 degrees.
Sift the flour, salt, and baking soda together in a bowl and set aside.
In another bowl, using an electric mixer, beat the butter, brown sugar, and granulated sugar until the mixture is light and fluffy. Add the egg, vanilla, and rum.
Beat the mixture well. Fold in the flour mixture, coconut, and chocolate chips.
Form the cookies on a baking tray, using a small ice cream scoop.
Bake for about 8-10 minutes.
Yield: 24-30 cookies.

You can make banana bread with rum..but not directly using rum. You soak the raisins in the rum...You might wanna try the below recipe?

You can use rum instaed of coffee (or with the coffee) to soak the lady fingers when you make Tiramisu.
