Hearty Breakfast Skillet
1/2 lb (8oz) pork sausage
2 cups frozen shredded hash brown potatoes
1 can rotel
1/2 lb (8oz) velveeta cheese, cut up
6 eggs
Brown sausage in large non-stick skillet on medium-high heat: drain. Add potatoes and rotel, cook 5 minutes and top with velveeta. Beat eggs and 2 tablespoons water with wire whisk in medium bowl. Pour evenly over ingredients in skillet; cover and reduce heat to low. Cook 10-12 minutes or until egg mixture is set in center and velveeta is melted. Let stand for 5 minutes before cutting into wedges with non-stick spatula. Makes 6 servings.

Ziplock omlettes.
They are very easy to do adn the kids enjoy helping.
Get out the ziplock baggies.... crack open two eggs per baggie then add you igredients of choice. I use shredded cheese and bacon the stuff you buy cooked and broken up already. Add 1 -2 tbl spoons of each to each baggie. clos ethe baggie give it a shake to mix everything up. open a corner of the baggie and squeeze all the air out. zip the baggie closed. place the baggie in a pot of boiling water for 13 minutes. Take the baggie out of the water and open it the perfect omlette rolls out . No mess lots of taste. The more you make the bigger the pot make sure the water is boiled before you place the omlettes in . I use a med pot for 2- 4 omlettes. If you are using green pepper s, onions etc, make sure you dice them up finely so they can cook

Here's a whole breakfast in one pan...
Frittata
6 eggs, beaten
1-ounce Parmesan, grated
1/2 teaspoon black pepper
Pinch salt
1 teaspoon butter
1/2 cup chopped roasted asparagus
1/2 cup chopped country ham
1 tablespoon chopped parsley leaves
Preheat oven to broil setting.
In medium size bowl, using a fork, blend together eggs, Parmesan, pepper, and salt. Heat 12-inch non-stick, oven safe saute pan over medium high heat. Add butter to pan and melt. Add asparagus and ham to pan and saute for 2 to 3 minutes. Pour egg mixture into pan and stir with rubber spatula. Cook for 4 to 5 minutes or until the egg mixture has set on the bottom and begins to set up on top. Sprinkle with parsley.
Place pan into oven and broil for 3 to 4 minutes, until lightly browned and fluffy. Remove from pan and cut into 6 servings. Serve immediately.

My Grandma's French toast recipe:
In a skillet, melt butter over medium heat. Whisk one egg with 1/2 cup or so of milk in a bowl. Take two slices of bread, and QUICKLY dredge them in the egg mixture, making sure to coat both sides of each slice. Fry the bread in the skillet, turning over when the bread is stiff enough to not fall apart when picked up with a spatula. When bread is cooked to desired golden color, remove it from pan and sprinkle with a mixture of cinnamon and sugar. If you have leftover egg mixture, make another slice of toast!

try this:
-canned pork & beans
-toasted bacon bits
-mozzarella cheese
In a microwaveable dish,
combine the pork & beans
top it w/ mozzarella cheese. make sure all surface will be covered by mozzarella.
put it in the microwaveable in medium heat for 1 minute or until the cheese melts.
when done, spinkle the bacon bits on top of the dish & then voila! i call it pork & beans casserole. enjoy ur breakfast. oh by the way, u can serve it w/ toasted garlic bread.

Easy sausage scramble
INGREDIENTS
1 pound sausage roll
2 cups home fries
1/3 cup chopped green pepper
8 eggs
1/2 cup milk
DIRECTIONS
In large skillet over medium heat, crumble and cook sausage, potatoes and green peppers until sausage and potatoes are brown.
In small bowl, combine eggs and milk until well mixed. Pour over sausage and potato mixture, stirring gently until eggs are cooked.
