When someone goes all-in, they can only claim money from the other players up to the amount they contributed. If one or more players put in money above what the all-in player put in, a side pot is created.
For example, Jim has $500 and goes all-in. He is called by Fred with $1000 and Tim with $700.
Each player has now contributed $500 to the pot to make it $1500 total (extra may be in the pot from blinds, antes and dead money)
After the flop, Tim goes all-in for his last $200. When Fred calls him, it goes into a side pot that only Fred or Tim can win. Jim cannot win $700 of either players' money since he only started the hand with $500.

What it boils down to is the fact that a person cannot win more than their share of the pot. For example if Bill Gates sat down at a table and said, "I'm all in." No one in the world could match his bet, so he would win every hand.
So to make things fair games are limited to the amount of chips each player has in front of them.
So let's say one player has $500, and another has $100 left. There is $800 in the pot already and the guy with $500 moves all in. Now if the $100 guy calls, he can't win the same amount of money that the $500 guy put in the pot, because he put $400 more in. So this is when a side pot happens.
In the above example $400 would be in the side pot because $100 guy is all in. If other people are in the hand and have money they can continue betting against each other. Those with money left stand to win the main pot that they contributed to, and in addition since they still have money they can also win the side pot.
This gets more complicated if more than one player is all in, and then multiple side pots are generated. But to keep it simple all you have to remember is that the maximum you can win is all that you are able to bet multiplied by the number of players in the hand. If there are 10 players at a table and everyone calls your all in bet of $100, you cannot win more than $1,000.

Nobody is allowed to 'play behind the table' (dip into their stash) during a hand. So a person with less money can only cover part of a bet. The remainder goes into a 'side pot' which the other players compete for.

the pot gets split into side pots if someone has gone all in and yet there are still people raising etc. since the first person cant call anymore - you get a side pot between the others. _ hope that helps mate : ) - i play on partypoker as vhairymary, might see you round - lol - all in fun - good luck.
