There are mail forwarding services for people who want to maintain confidentiality in their communications. Whether you want to actually go to that other city and pick up your mail, or have them put it in an envelope -- plain brown wrapper, traditionally -- and mail it to you at your home or office or P.O. box in your city, it's up to you. Look under "mailing services" in the yellow pages.

Send the letter, stamped, along with another stamped envelope and no return address, to someone you know in the city you want the letter to bear the postmark of, and request the remailing.

I think the only way you can do that is to send letter to someone else who lives in a different city and ask them to mail the envelope for you.
