Please don't give me something from a cookbook. The person in our neighborhood who used to make them moved away.

I have baked two of these pies in the last month and they go as fast as I make them. I like the potato to be a little chunky so I can really taste it.
Sweet Potato Pie
1 9" unbaked deep dish pie crust
3 1/2 c baked mashed sweet potatoes (potato tastes better baked than boiled)
1 c sugar
3 eggs
1 tsp vanilla
1/4 tsp salt
1/2 stick melted butter
1 Tbsp cinnamon
1 c canned cream
Roughly mash potatoes and add sugar, eggs, vanilla, salt and cinnamon.
Add melted butter and cream and stir to combine.
Pour into pie crust and bake at 350'F for 1 hour.

2 lg sweet potatoes
2 eggs
2 egg yolks
2/3 c sugar
1/2 ts salt
1 ts ground cinnamon
1/4 ts ground ginger or 1 teaspoon
-finely; grated
1 ; fresh ginger
1/4 ts freshly grated nutmeg
1 1/4 c light cream or half-and-half

Instructions

Prepare and chill the dough.

Bake sweet potatoes for 1 hour at 350 degrees, or until soft. Cool, peel
and puree in the food processor.

Preheat oven to 350 degrees and set a rack in the lowest level. For the
bottom crust, lightly flour the work surface and the dough and roll it to
a 12-inch disk. Fold the dough in half and place it in the pan; unfold
the dough and press it firmly into the pan. Trim away all but 1/2-inch
excess dough at edge of pan. Fold dough under and flute edge.

For the filling, scrape pumpkin into a bowl and whisk in eggs and yolks.
Whisk in remaining ingredients in order, whisking smooth between each
addition. Pour the filling into the prepared pie crust.

Bake the pie for about 1 hour, until the crust is baked through and the
filling is set. Cool the pie on a rack.

For Squash Pie, halve, seed and wrap in foil, one large acorn squash and
substitute for sweet potatoes, above.

4 medium sweet potatoes, boiled and peeled, 1 stick butter, 1 cup sugar , 2 teaspoons vanilla, 1-2 teaspoons coconut flavoring , 2 eggs and enough milk to bring to the consistency desired. Use a mixer to mix potatoes well. Add the butter and stir till melted. Add sugar, vanilla and coconut flavoring. Last, add milk a little at a time till satisfied with the thickness. Pour into 2 deep-dish pie shells and bake at 375 for 45 minutes. You can leave out the coconut flavoring and add 1/2 cup of OJ instead.
