I'm looking for something relatively easy and inexpensive to cook for a date tonight. I am trying to watch my figure so preferably not something fatty or deep-fried or covered in sugar. Help!

Low-Fat Sesame Ginger Noodles

Serves: 6-8
Prep. Time: 0:30

1/2 cup low-fat creamy peanut butter
3/4 cup chicken broth
1/4 cup soy sauce
2 Tbls. rice wine vinegar
1 Tbls. minced fresh ginger
1 Tbls. sesame oil
1 clove garlic - minced
2 cups watercress - trimmed
1 med. cucumber - peeled, seeded, sliced
1/2 cup minced yellow bell pepper
1/2 cup minced red bell pepper
1/4 cup thin sliced radishes
1/4 cup thin sliced green onions
1 lb. box linguini noodles - prepared as directed


-Puree peanut butter, chicken broth, soy sauce, vinegar, ginger, oil, and garlic in blender until smooth.
-Combine vegetables and pasta in large bowl.
-Toss with dressing.


Spinach Lasagna
Serves: 10
Prep. Time: 2:00

1 cup chopped mushrooms - preferably fresh
1 cup chopped onion
1 Tbls. minced garlic
2 Tbls. olive oil
3 cups ricotta cheese - low-fat okay
2/3 cup grated Romano cheese - low-fat okay
2 cups fresh spinach - optional, but suggested
1 tsp. dried oregano
1 tsp. dried basil
1 tsp. salt
1/2 tsp. black pepper
1 egg
20 lasagna noodles - prepared as directed, drained
3 cups shredded mozzarella cheese - low-fat okay
1 cup grated Parmesan cheese - low-fat okay
3 cups spaghetti sauce


-Cook mushrooms, onions, and garlic in olive oil over medium-high heat until onions are tender; drain excess liquid; set aside to cool.
-Boil spinach for 5 minutes; drain; squeeze out excess liquid; chop.
-Fold together spinach, ricotta, Romano, salt, oregano, basil, pepper, and egg.
-Beat in cooled mushroom mixture with an electric mixer on low speed for 1 minute; set aside.
-Lay 5 lasagna noodles in the bottom of a lightly greased 13" X 9" X 2" baking dish.
-Spread 2 cups of the cheese/spinach mixture over noodles.
-Sprinkle 1 cup mozzarella and 1/3 cup Parmesan on top.
-Spread 1 cup spaghetti sauce over cheese.
-Repeat layering 2 times.
-Cover dish with aluminum foil and bake in a 350 degree oven for 1 hour.
-Cool for 15 minutes before serving.

Notes: This lasagna can be made without the spinach.


Low-Fat Garlic Chicken
with Bow-Tie Pasta

Serves: 4 - 6
Prep. Time: 0:30

1 lb. boned, skinned chicken breasts - sliced lengthwise
2 Tbls. olive oil - divided
1 tsp. salt
8 cloves garlic - minced
1/2 lb. fresh mushrooms - scrubbed clean, quartered
1/2 cup sliced green onions
14.5 oz. can diced tomatoes - un-drained
1/2 cup chicken broth
1 tsp. corn starch mixed with 1 tsp. cold water
1/2 tsp. red pepper flakes
1 tsp. minced fresh basil OR 1/2 tsp. dried basil
2 cups cooked bow-tie pasta
1/4 cup chopped fresh parsley OR cilantro

-In a large skillet over medium-high heat, brown chicken in 1 Tbls. oil for 5 minutes on each side, or until juices run clear; sprinkle with salt; remove from skillet and keep warm.
-In the skillet, sauté garlic in remaining 1 Tbls. oil until golden.
-Add mushrooms and green onions to skillet; sauté for 2 minutes.
-Add tomatoes, broth, corn starch mixture, red pepper, and basil to skillet; heat to boiling; reduce heat to medium-low and simmer for 5 minutes; remove from heat.
-Fold cooked chicken, pasta, and parsley/cilantro into the skillet.

Notes: The bow tie pasta in this recipe can be substituted with rotini, rigatoni, penne, mostaccioli, or radiatore.

CHICKEN WITH CUCUMBERS
2 tbsp. olive oil
1 tbsp butter
3 boneless, skinless chicken or turkey breasts
1 large cucumber
1/2 an onion, sliced thin
1/2 tsp. ground cumin
1/2 tsp. ground mustard
2 cloves garlic, minced
1/2 cup chicken stock ( 1/2 cup water and 1 chicken boullion cube works too)
3 tbsp. sour cream

Heat oil and butter in skillet. Cube chicken and add to pan, cook thoroughly. Take cucumber and peel, slice in half, seed with a spoon and dice small. When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes. Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender. Return chicken to skillet. Stir in sour cream. Serve over rice, pasta or mashed potatoes.


CREAMY CUCUMBER SALAD
3-4 cucumbers, peeled and sliced
1/2 red onion, sliced thin
1-2 Tomatoes, diced
1 ½ cups Ranch or Cucumber Ranch dressing

In large bowl, combine all ingredients, tossing to coat the vegetables. Place in refrigerator and chill before serving.


Pineapple Orange Sorbet
1/2 cup water
1/2 cup granulated sugar
2 cups orange juice
1 tablespoon lemon juice
1 (20 ounce) can crushed pineapple
2 teaspoons freshly grated orange zest

In a medium saucepan, bring water and sugar to a simmer over medium high heat until sugar is dissolved. In a food processor, puree pineapple with its juice until smooth. Transfer to a metal bowl, and stir in lemon juice, orange juice, and orange zest. Freeze until slightly firm, but not frozen. Process mixture again in the food processor or beat with an electric mixer until smooth. Transfer to a freezer container and freeze until firm, about 2 hours.

Serve this w/ pasta of your choice.

CHICKEN PICCATA

2 skinless and boneless chicken breasts, butterflied and then cut in half
Sea salt and freshly ground black pepper
2 cups all purpose flour, for dredging
6 tablespoons unsalted butter
5 tablespoons extra-virgin olive oil
1/3 cup fresh lemon juice
1/2 cup chicken stock
1/4 cup brined capers, rinsed
1/3 cup fresh parsley, chopped

Season chicken with salt and pepper. Dredge chicken in flour and shake off excess.
In a large 10 or 12-inch skillet over medium high heat, melt 2 tablespoons of butter with 3 tablespoons olive oil. When butter and oil start to sizzle, add 2 pieces of chicken and cook for 3 minutes. When chicken is browned, flip and cook other side for 3 minutes. Remove and transfer to plate. Melt 2 more tablespoons butter and add another 2 tablespoons olive oil. When butter and oil start to sizzle, add the other 2 pieces of chicken and brown both sides in same manner. Remove pan from heat and add chicken to the plate.

Reduce heat to medium low and add the lemon juice, stock and capers. Return to stove and bring to boil, scraping up brown bits from the pan for extra flavor. Check for seasoning. Return all the chicken to the pan and simmer for 5 minutes. Remove chicken to platter. Add remaining 2 tablespoons butter to sauce and whisk vigorously. Pour sauce over chicken and garnish with parsley.

Pasta!
It's easy and cheap--just buy some noodles and some spaghetti sauce and cook them according to the directions
