Could I use something other than oils?????

You can fry using stocks (beef chicken or even vegetable) just lower the heat a bit - it also imparts a nice flavour to the food.

Yes, olive oil, you can use chicken stock or vegetable stock in some recipes Pam is good.. You could use butter or shortening.

depending on what you do... sometimes I replace olive with olive oil... or I just diminish the amount requested

baking- applesauce. but you have to adjust sugar to sweetened or unsweetened...
