Its pigs blood, there's also sultanas and sometimes even nuts.

it's not puddking at all. It's really something English called "blood pudding. BLECH I know!

You use a barley or porridge type filling with blood from pigs or cows (really) and fill it up into a sausage casing. It's usually made in a ring like polish sausage and it's baked.

It's an acquired taste.

If you really want to try something similar (but I wouldn't recommend it), you may be able to get Polish kishka here in some parts of the States. It's blood sausage thickened with buckwheat and tastes and smells just as nasty as it sounds.

Come on, you don't know what you're missing. The French and Germans have their versions too, Boudin, I think and blutwurst. Better fried than baked.
