Corfe Castle (near Bournemouth/Poole/Weymouth) is very dramatic, on a hill overlooking a steam railway. It's in ruins, but you can go into the old keep and on the ramparts. It was destroyed by Cromwell's lot as retribution for supporting the King in the Civil War.

Dover Castle is well worth a visit as is Leeds Castle which is nowhere near Leeds as it's in Kent!

Warwick Castle is ok but very touristy and expensive. Take a look at the National Trust and English Heritage sites for some good Castles...

Its a toughie, The uk is saturated in castles! depending on where you live, The Midlands and the South have the best 'touristy' castles, for authentic norman-early medieval castle life, try stansted castle in essex, a compete motte and bailey working castle, train from liverpool street to stansted mountfichet will get you there. warwick castle for the kitsch, but its history makes up for it. leeds castle in kent is beautiful, rochester castle in kent for its sheer height and presence, chepstow, goodrich and stokesay castle are welsh border forts and are worth the visits and are full of history, good luck!!
