I swear i love this one so muc I keep posting it on here.
There are two here. Main dish first and Salad to go with.
Chicken Breast in Champagne - serves 2 (I'vve done this for 4 and it turned out great)
1 carrot finely chopped
1 small onion finely chopped
3 large mushrooms finely chopped
2 tbsp butter
1 cup champagne or dry white wine
2 chicken breasts, halved, boned, skinned
Salt and pepper to taste
Sauce:
1/2 cup heavy cream
1/4 cup champagne or white wine
Salt and pepper to taste
parsley finely chopped
In a heatproof casserole, make a bed of carrot, onion, and mushrooms. Add butter cut into thin slices and add champagne or wine.
Place chicken breasts on top of the mixture. Sprinkle the chicken with salt and pepper, cover the casserole, and bake chicken in a moderate oven (325^) basting it frequently with the liquid from the casserole for 50-60 minutes or until it is tender.
Remove chicken to a platter and keep warm. Cook sauce uncovered over moderate heat until it is reduced by half.
Stir in heavy cream and champagne or wine and pour sauce through a sieve. Season with salt and pepper and a little finely chopped parsley. Pour sauce over the chicken breasts and garnish the platter with braised celery and sautéed pimentos.
Salad. This is for 4, you can halve it for two.
3/4 cup sour cream
1/4 cup raspberry preserves
3 tbsp white wine vinegar
1/8 teaspoon Dijon mustard
4 firm, ripe pears
2 tbsp lemon juice
1 head Bibb lettuce, torn
1 small head romaine lettuce, torn
1/2 cup freshly shredded Parmesan cheese
6 bacon slices, cooked and crumbled
1/2 cup fresh raspberries
Whisk together first 4 ingredients. Set dressing aside.
Peel pears, if desired; quarter pears. Brush with lemon juice.
Arrange lettuce on 4 plates, pears as well (I cut them in small chuncks instead of wedges). Drizzle dressing on top. You can add nuts instead of bacon (I suggest walnuts) and you can also add grapes or even apples (any fruit work with this dressing)

SOUR CREAM NOODLE BAKE
1 cup small curd cottage cheese
1 cup sour cream
1 jar spaghetti sauce
1 cup shredded cheddar cheese
6 oz cooked medium egg noodles
1 lbs ground beef (optional)
Cook the noodles. In a seperate bowl, mix the sour cream and cottage cheese. Add the cooked noodles. Pour into an 11 x 7 pan. Mix cooked meat and spaghetti sauce and poor over the top of the noodle mixture. Sprinkle with cheddar cheese.
Bake 30 mins at 350.
**This is recipe is fondly known in my household as "Noodle Crack" because people get so addicted to it**
BUSY DAY CHICKEN
4 chicken breasts, boneless and skinless
1 cup shredded parmesan
1 package Uncle Dan's Southern Style (classic ranch) Salad Dressing Mix
1 egg slightly beaten
1/4 cup melted butter
Combine parmesan and salad dressing mix in a bowl. In another bowl, have the egg slightly beaten. Dip the chicken in the egg, then the parmesan mix. Get it good and covered. Place it on a cookie sheet and bake at 425 for 35 minutes.
If the chicken appears dry as it cooks, brush it with the melted butter.
SUPER MEATBALL SUBS
1 1/2 pounds ground beef
1 egg
1/2 teaspoon crushed red pepper flakes
3 cloved garlic, minced
1/4 medium onion, chopped
Handful of chopped flatleaf parsley
1 cup Italian bread crumbs
4 shakes worchestershire sauce
2/3 pound Provolone cheese, cubed into 1/2" squares
Spaghetti Sauce
Hogie Sandwich Rolls
Combine beef through worchestershire in a bowl. Pull out a palmful size in your hand and nest a cube of provolone in the middle. Wrap the meat around the cheese and place on an Olive Oil brushed cookie sheet. Bake the meatball for 12 mins at 425. When they are done, drop the balls in saucepan of warm spaghetti sauce to coat them. Place on the toasted hogie rolls and eat!!!
Makes 50 balls -- I always half and sometimes quarter this recipe.

This is fairly simple and doesn't take all day to fix.
EGG & CHILI CASSEROLE
What You Need
10 eggs
1/2 cup butter
1/2 cup flour
1 tsp salt (blend with flour)
2 four oz. cans diced green chilies (mild or hot, your choice)
1 pint cottage cheese (large or small curd)
1 1/2 lbs. Monteray Jack cheese (shredded)
1 large mixing bowl
Directions
Grease 9 x13 pan lightly.
In the mixing bowl, whip eggs until blended.
Gently stir in all remaining ingredients.
Pour into greased pan
Bake uncovered at 350F until set. (30-45 min.)

Chicken fried rice:
Saute chicken slices, cook until no longer pink, add in some vegetables(carrots, peas, mushrooms are good) cook until tender, add in prepared rice, 2-3 tbsp of soy sauce(or more) mix together. I you want scramble an egg or two (either fry egg in separate pan or push fried rice to one side and fry in same pan! )
This should take less than 20 minutes.

Chili Mac
1 lb ground beef browned w/salt/pepper and or chili pepper
1 can veg soup
1 can tomato soup
1 pkg elbow noodles, cooked
kidney beans optional.
Mix together in a skillet or pot and simmer. Add water if too dry

1 cup of dry rice in a casserole dish ,1 cup of water 1can of cream of mushroom or 1 can of tomato sauce pour on top then add 4pork chops or meat of your choice cover with tin foil bake 20 min. uncover add grated cheese of choice bake for an extra 10min. or until cheese is melted completely . rolls and salad you have got a complete meal.

vegetables souvlaki (put anything you have at home, pepper, tomatoes courgettes, mushrooms aubergines
Roast them. Put a little butter and salt on them)
with garlic bread and salad with fried bacon,sesame parmesan cheese and corn.
