I got this from a cooking class a number of years ago, and still make it a lot.
KEY LIME PIE
FILLING:
½ CUP FRESH LIME JUICE [2 ½ LIMES]
1 CAN CONDENSE MILK
2 CUPS WHIP CREAM
GRANULATED SUGAR
CRUST:
½ LB. CHOCOLATE WAFER COOKIES
¼ CUP MELTED BUTTER
MIX WAFERS AND BUTTER IN FP.
PRESS INTO A PIE PLATE
WHISK TOGETHER LIME JUICE AND CONDENSED MILK ADD A DROP OR TWO OF GREEN FOOD COLORING. WHIP CREAM WITH GRANULATED SUGAR, AND FOLD INTO MILK/JUICE MIXTURE. POUR INTO CRUST.
REFRIGERATE AT LEAST ONE HOUR. SHAVE CHOCOLATE ON TOP.

1 (9 oz.) Cool Whip
1 c. Eagle Brand condensed milk
1/2 pt. whipping cream, whipped
1 chocolate cookie or graham cracker crust (store bought)
Dash of salt
Green coloring
Combine limeade with milk and salt. Add coloring. Fold in Cool Whip and pour into pie shell. Refrigerate for 1 hour. Add whipping cream and swirl. Decorate with thin slices of limes. Refrigerate. Topping can also be sour cream with sugar and vanilla adding. Easy, fast and good!

"Key Lime Pie" - 8 servings
1 (9") baked piecrust
6 egg yolks
2 (14 oz.) cans sweetened condensed milk
1 tsp. grated lime peel
1 cup lime juice
1 cup heavy cream; whipped
1) Have piecrust cooled. In medium bowl with wire whisk, beat egg yolks. Stir in condensed milk, lime peel and lime juice; mix well until slightly thickened.
2) Pour mixture into piecrust. Cover; refrigerate until serving time, at least 6 hours.
3) To serve: Spread whipped cream over pie.

For an authentic Key Lime recipe -- buy a bottle of key lime juice (NOT regular lime juice) and you will find a wonderful recipe on the label.

Yep. Buy a pre made crust from the freezer section in the store, (I like the chocolate cookie crumb ones), and get the Jello brand mix and follow the directions. Less than 20 mins.
