Any GOOD jeweler should make the ring to your specifications.... so you can make it as unique as you want.
My fiance' took me with him to pick my ring. He asked me beforehand (with a paper band that said "will you marry me?") and then he told me that he didnt want to get me a ring without my opinion on it since I was the one who had to wear it.
In the end we got a very nice 5mm Heart-shaped pure blue Aquamarine (his birthstone) with 2 small garnet chips (my birthstone) its gorgeous, I love it, and best of all it didnt cost thousands (around $600). It came from a reputable "diamond" store. Just shop around to see who will do custom jewelry for you and then have her go with you if you are truly that stuck for an idea.

Look at a reputable antique jewelry dealer for ideas. You may find an antique ring that you love, or you can ask the jewler to design a new ring in an older style. Personally, I think the art deco era rings are fantastic, and very different from what most people are wearing today.
I highly suggest James McHone Jewlers in Harrisonburg, VA if you are anywhere within 100 miles of central Virginia!

Why not go to the Jewellery Quarter in Birmingham if you aren't too far away? They will make up something to your design at a reasonable price. I knew what I wanted for my wedding ring but couldn't find exactly the right thing, so we went there and I got it made for me, starting with just the plain band.
If you're too far away, then try other jewellers - I know that even the high street ones do design days, where you can design your own.

There are many beautiful coloured gemstones. I think sapphire is really pretty for a ring, but there are lots of others. If your gf has a favourite colour, maybe go for that. If she likes pink, go for a pink quartz or tourmaline. If green, emerald - etc..
Another thing to look into is estate jewellery. Fine jewellery stores have a section like that. Some of the settings from the 1920s are particularly beautiful.

Do you mean like other gemstones? Or multiple tones? Or stones of a non-traditional shape? All these options are available. Plus you can choose different looking settings. You haven't really specified what you are looking for. You can also get the ring custom made, you know...

Either if you're rich enough or can pretend you are then go to bespoke jewellers who have their own designers and goldsmiths; tell them some ideas of styles you like, things you don't want and see what ideas they come with.
Or cheaper - find an art college or similar that does proper jewellry courses, speak to and commission a poor impoverished student (for half the price of a pro).

Have you asked her what her fav gemstone is? What's her birthstone? What's your birthstone? Whats the birthstone fro the month of the wedding(if you know when wedding is)? Have you considered garnets? Have you considered finding a gemstone in her fav color? Engagement rings don't have to be just diamonds.

Why do you need to be different - it's probably not going to last anyway. Some people think the more they spend or different they make it means that they stand a better chance of success - not so - what about the length of a celebrity engagement/marriage?
