My turkey is 7.88lbs, and don't want to over dry the white meat

I won't cook a Turkey any other way. It's easier, takes less time to cook and most of all the meat comes out moist and juicy!

After stuffing the turkey take a piece of cheesecloth and soak it in olive oil or vegetable shorteneing. Completely cover the breast with it. Put the turkey in a 325 degree oven for about 22 minutes per pound but be sure to check it often for doneness. Use a meat thermometer in the thigh. Done is 165 degrees.

While its baking, baste every 30-45 minutes. Loosen the cheesecloth each time you baste so it doesn't stick. Remove it completely half an hour before the turkey is done.

after your turkey is thawed out you rinse it with water pat it dry and place it in a baking pan and rub butter all over it, then you season it, I use Lawry's seasoning salt, then I cover it with foil paper, and stick it in the oven. After about 30-45 minutes check it and the juices and oils that are coming out of the turkey pour them over the turkey and do that every 1/2 hour or so, that way the turkey doesn't dry out. It works every time for me. To check to see if the turkey is done, you can stick a fork right above the drumstick if blood comes out of course it isn't ready or if juices come out it's not ready when you poke it, it has to be dry. I have always had success following the directions except for rubbing butter all over the bird then salt & pepper as you like it, place it in the roaster on rack breast side down (this will allow all the juices to run into the breast. Leave covered till the last 20 - 30 minutes remove cover or foil tent and allow to brown.

Buy a Reynolds baking bag and follow the instructions. I have NEVER had a dried out bird.

you cook it for 1 hour for every 4 pounds it weighs so just about 2 hours for you.

after you rub it with oil than you season it and you do 2hrs. per pound i haven't actually cooked a turkey before but thats what they said on the cooking shows. You might want to check out paula's home cooking on the web or emeril.
