New York milk can legally be sold only up to 96 hours after 6 A.M. on the day after pasteurization. They give it about 7 days before expiration rather than the 8 - 12 days that other places have. It's because the delivery/handling time is sometimes different in New York. It can take a little longer to get the milk on the shelf and there's more of a chance of it sitting unrefrigerated for awhile than in places outside the city. It's more of a precaution meaning that some of the NYC milk may have sat out at one point and it may not be as fresh when you buy it.

I'm guessing NYC is more strict on how long it should be kept.
