In all supermarkets I checked, the tuna in oil is always cheaper than the tuna in salt water, given you choose the same brand and can size. My economic intuition tells me oil would be more expensive than some salt water.

Very few people buy the tuna in oil because it doesn't taste as good and isn't as good for you as the stuff sold in water. The idea is that tuna packed in oil will last longer, but the stuff in water already lasts a really long time, so not many people need it. The price difference is the companies way of trying to encourage people to buy the oil kind.

Because it probably doesn't sell well due to the high fat in the oil content. Most people buy it packed in water but me, I prefer the oil packed tuna.

it may not be the same tuna cut. Also... unless it's in extra virgin olive oil, you're likely to buy an adulterated product - in other words, the more natural (e.g. in water), the better.

Maybe because the stuff in oil lasts longer?
It's true if you read the sell by dates the ones in oil last quite a bit longer than those packaged in water.
Also maybe because the water is healthier, thus dearer?
