With the chops being thick cut I would stuff them.
STUFFED VEAL CHOPS WITH VEGETABLES
4 veal chops
1/2 c. chopped cooked ham
2 tbsp. Parmesan cheese
2 tbsp. chopped mushrooms
1 tbsp. flour
1 tbsp. butter
1 c. sliced carrots
3/4 c. green pepper
1 c. celery
1/2 c. onion
1/2 tsp. salt
1/4 tsp. oregano
1/4 tsp. basil
1 can (15 1/2 oz.) spaghetti sauce with mushrooms
First make a pocket in veal chops. Mix ham and mushrooms together and stuff into chops. Close pocket with toothpick. Mix flour and cheese; coat stuffed chops.
Melt butter in skillet and add chops and brown. Put chopped vegetables in baking dish (2 inches deep). Put chops on top of vegetables. Sprinkle with the spices. Pour sauce around chops. Cover and bake in a 350 degree oven for approximately 1 hour. Makes 4 servings.

Instructions
Trim neatly 8 chops and put into frying pan with 4 tablespoons vegetable shortening, and fry over quick fire an nice brown color.
As the meat will afterwards be cooked again, the frying process should be done quickly without actually cooking the chops.
Place them between 2 boards, put weight not too heavy over top, and keep them until cold.
Strain vegetable shortening, and keep for further use.
Cut 1/2 cup pork and 1/2 cup beef marrow into small pieces, pound in mortar; when fine, add 1 tablespoon anchovy paste, 1 teaspoon powdered savory herbs, 1 yolk egg, and piece of vegetable shortening about size of nutmeg.
Pound thoroughly until smooth, season with pepper and salt, rub through sieve, and cover side of each chop thickly with this.
Put them on vegetable shorteninged baking sheet, cover with few fried breadcrumbs, sprinkle with melted vegetable shortening and place in hot oven for 10 minutes.
Dish up chops in circle on hot dish, and serve.

1 pound spinach, washed, cleaned
6 tomatoes, cut in halves
3 tablespoons butter
Seasonings to taste
Instructions
Put veal chops, butter, tomatoes and seasonings in a roasting pan.
Cook in moderate oven for about 30 minutes.
While the chops are cooking, boil the spinach in salted water for 15 minutes.
Drain off water.
Put the spinach In the roasting pan with the chops.
Let cook together for about 5 minutes.
Then serve.

"Veal Mustard" - 4 servings
4 veal rib or loin chops; 1/4" thick
1 tsp. salt
1/2 tsp. pepper
3 tbsp. prepared mustard
1/2 cup diced bacon
3/4 cup light cream
2 tbsp. drained capers
Heat oven to 350*. Season chops with salt and pepper; spread both sides with mustard. Place in ungreased square pan, 9x9x2". Sprinkle bacon on and around chops. Bake 1 hour, 15 minutes. Place chops on warm platter; keep warm.
Drain all but 1 tbsp. fat from pan, leaving bacon and mustard in pan. Stir in cream and capers; heat to boiling, stirring constantly. Reduce heat; simmer 10 minutes or until sauce is consistency of thin white sauce. Pour sauce over chops.

VEAL CHOPS WITH CREOLE MUSTARD CRUST

1/4 cup Creole mustard
2 tablespoons mayonnaise
2 green onions, chopped, divided
2 8-ounce veal rib chops (each about 1 inch thick)
Ground allspice
2 tablespoons olive oil
1 large garlic clove, minced
1 cup fresh breadcrumbs made from crustless French bread
Position rack in bottom third of oven and preheat to 450°F. Mix together mustard, mayonnaise, and 1/2 of green onions in small bowl.
Sprinkle chops on both sides with salt, pepper, and allspice. Heat oil in heavy medium skillet over medium-high heat. Add veal; sauté until brown, about 2 minutes per side. Transfer veal to small rimmed baking sheet. Add garlic to drippings in skillet; stir 15 seconds. Add breadcrumbs; sauté until golden and crisp, about 1 minute.
Spread half of mustard mixture thickly atop each chop. Spoon crumbs atop mustard mixture. Bake until thermometer inserted horizontally into chops registers 135°F for medium-rare, about 7 minutes. Transfer to plates. Sprinkle with remaining green onions.
Makes 2 servings.

Veal in the oven is best with roasted veg round it like potatoes, peppers, courgettes, aubergines etc.
