My husband's birthday is coming up in a few days and I live three hours away from any places like Cold Stone or Dairy Queen where they have them pre-made. He likes caramel and chocolate alot so if they are in the mix, it would be helpful.

Not sure what those (CSC, DQ) ice cream cakes are like, but when I was a kid we used to get angel food cakes that were filled with ice cream for our birthdays.

Bake or buy an angel food cake, slice top third off and set aside. Soften ice cream so that it can be spread fairly easily. Dig out a trench (not too deep) in bottom of cake, fill with the softened ice cream. Replace top of cake. Frost with whipped cream. Store in freezer until about 15 minutes before serving. Slice and serve.

I made an ice cream sandwich cake. I put down a layer of ice cream sandwiches. then I sprayed some whipped cream from a can on top of that. Then I sprinkled M&M's. then put more icecream sandwiches over that. spay more whipped cream and sprinkled more M&M's. Youe could probally dribble this with caramel too. Just make sure the house isn't warm when you make it, or make out on the patio table. It was warm in my house and the cake started to slide. It can be made pretty quick too. here it is.. Ice Cream Cake INGREDIENTS 1 (18.25 ounce) package chocolate cake mix 1/2 gallon chocolate ice cream, softened DIRECTIONS Prepare cake according to package directions; bake in a 9x13 inch baking dish and cool completely. Use ice cream that comes in a rectangular carton. Remove the carton and, using a piece of string or dental floss, cut the ice cream in half lengthwise (long side to long side) and place the two layers side by side on a piece of waxed paper. Place the cooled cake over the ice cream. Trim the cake and ice cream so that the edges match. Place a board or serving platter over the cake, hold onto the waxed paper and board, and flip the ice cream cake over. Remove the waxed paper and smooth out the seam between the ice cream slabs. Cover with waxed paper and freeze until very firm. Decorate as desired.

Ths one is easy but terrific:

Make one brownie mix according to package directions and bake in a 10" round springform pan. Let cool.

Take half gallon of ice cream (choose a rich caramel/chocolate flavor for your husband's birthday) out of the freezer. Let it soften at room temperature for about 15-20 minutes. Spread it over the cooled brownie. Cover with foil and freeze at least 1 hour.

If you want to decorate this, after it has frozen drizzle with melted chocolate or with chocolate ice cream topping. Or if you know cake decorating techniques, pipe a border or design of frosting and freeze.

i have a great recipe for a candy bar cake, it is very rich and easy to make -----

bake one German chocolate according to pkg.
let cool, in the meanwhile, mix one can of sweetened condensed milk with one jar of Carmel ice cream topping { put the topping in the microwave for a few seconds with the lid off of course to soften it, before mixing with the milk}
with the handle of a wooden spoon, poke holes in the top of the cake, make quite a few, next pour the Carmel&milk mixture into the holes, set in the fridge to cool thoughly

unwrap and put in a freezer of any plastic bag ten to twelve heath or any candy bar, butterfinger, something that will crumble easily, and break up into small piece with the roilling pin, put cool whip on the cooled cake as thick as you like then sprinkle crumbled candy over the cool whip and refridgerate, if it is more than a few hours till you are going to eat it you can freeze it, just remember to place it in the refidgerator on the morning of the party. this is an awsome cake recipe.

MINT CHOCOLATE ICE CREAM CAKE
A festive and refreshing dessert.
1 16-ounce package chocolate sandwich cookies
3 tablespoons unsalted butter, melted

1 quart mint chocolate chip ice cream


1 quart cookies and cream ice cream


1 10-ounce package mint chocolate chips




Finely grind cookies in processor. Blend in melted butter. Press crumb mixture evenly onto bottom and 2 1/4 inches up sides of 9x2 3/4-inch springform pan. Refrigerate 30 minutes.
Meanwhile, soften mint ice cream slightly, about 2 minutes in microwave set on medium-low or in refrigerator. Spread mint ice cream evenly in chilled crust. Freeze until set but not solid, about 1 hour.

Soften cookies and cream ice cream. Spread evenly over mint ice cream in pan. Freeze at least 2 hours or overnight. Melt chocolate chips in top of double boiler over simmering water, stirring until smooth. Using fork, lightly drizzle some chocolate back and forth over cake, creating design. Release sides of pan. cut cake into wedges. Serve, passing remaining melted chocolate chips separately as sauce.

Serves 8.
