I'm looking for a recipe for something called Celestial Chicken. Did a search and found the dish, but not the recipe. It's chicken that is lightly floured and fried and served over a bed of rice with some kind of white sauce. Can anyone help? This was my fiancee's childhood favorite recipe and I'd love to make it for him!

CELESTIAL CHICKEN

4 broiler breasts, boned
2 tsp salt
2 tsp monosodium glutamate (optional)
1 C light cream
1 C flour
2 tsp paprika
1/4 tsp black pepper
1/4 C snipped parsley
Fat for frying
5 C cooked rice

Cut chicken breast into strips one-half inch wide with poultry shears.
Combine flour, salt, paprika, monosodium glutamate and pepper.
Dip chicken strips into cream, then coat with seasoned flour. Reserve remaining cream for sauce.

Heat fat 1/2 inch deep in frying pan at 380 degrees. Add chicken strips and fry to golden brown

10 to 12 chicken breasts, deboned
2 cans cream of mushroom soup
2 cans cream of chicken soup
1 cup cooking sherry

Place in baking dish. Mix 2 cans cream of mushroom soup, 2 cans
cream of chicken soup and 1 cup cooking sherry. Pour over chicken.
Bake at 325 degrees for 2 1/2 hours. Serve with rice.

Celestial Chicken

Ingredients
Chicken:
1 1/2 lb Boneless Chicken Cubed
1 cup Flour
2 teaspoon Salt
2 tablespoon Paprika
1/2 teaspoon Pepper
Rice:
2 cups
White Sauce:
2 cup Milk
4 tablespoon Butter
4 tablespoon Flour
2 Chicken Boulion Cubes

Preparation
Chicken:

Dip Chicken Cubes in Milk and then Flour coating completly. Deep Fry until Golden Brown and Done.


Rice:

Prepare 2 Cups of Rice.


White Sauce:

In a small sauce pan melt butter, then slowly add flour to make a paste then slowly blend and add milk, add Boulion cubes. Cook over low heat stiring frequently. Salt and Pepper to taste.


Final Prep:

Put rice in a cake dish leaving a hole in the middle. Then place the Fried Chicken cubes in the middle. Pour White Sauce over the top. Serve.

It looks like Marni B has given you a pretty good answer.

There seems to be a number of recipes for this dish if a post to rec.food.recipes is any guide. Perhaps you have a cookoff with your fiance being the judge over successive weeks.

There is recipe A for your consideration.

4 to 5 chicken breasts,
deboned and cubed
1 cup self-rising flour
1/2 cup milk
1 egg
sesame seeds
cooking oil

Make batter with flour, egg and milk. Dip chicken in
batter, then sprinkle with sesame seeds. Deep fry in hot
cooking oil until golden brown. Serve with a mustard sauce made of mustard and ketchup

Or there is recipe b for your delectation.

10 to 12 chicken breasts,
deboned
2 cans cream of mushroom soup

(Serves 4)

1 frying chicken, cut into
serving pieces
1/2 cup honey
1/2 cup prepared mustard
1 tsp. curry powder

Place chicken pieces, unbrowned, in shallow casserole.
Cover with sauce made by combining the remaining ingredients.
Bake uncovered in a moderate 350 degrees oven for 60 minutes or until done. May be cooked in frying pan on top of stove over medium heat, covered, until tender. Uncover last 20 minutes.
Note: Leftover sauce is good over ham.
