I put a roast in the crock pot all day on low heat. I then put it in the fridge over night.The next day, Pre-prepare 2 diced tomato's, 1 onion and one jalapeno, if you like a lot of heat, add two. If you don't like a lot of heat, choose a jalapeno that has not striations on it. Then, I put 3 to 4 tbs of olive oil in a pan on medium heat and then put the roast in. After the roast is in the pan, turn heat on high. Use a fork to pull the meat off into strings until you've broken the whole thing up. When it's sizzling hot and you've got it all shredded up add your vegetables. Be careful because it's going to pop. Cook on high until the veggies start to become soft and then turn on low for about 3 minutes. This is a great filling for tacos, using corn tortillas or tamales. You can find a masa recipe on-line. DELICIOUS. Even my kids love them and they hate onions.

Every time I make Chicken Chili or a dish affectionately referred to as Poor White Trash Casserole, I am complimented and asked for the recipe.
Chicken Chili - 1 pound boneless skinless chicken breast cooked and cubed, 2 cans or one jar of beans, 8 oz of shredded cheese, 16 oz jar of salsa. Mixed together in a crock pot on high til hot, stirring frequently. (Add milk until you reach the desired consistency).
PWT Casserole - 1 pound browned ground beef drained, mix with 1 can of cream of mushroom soup (and a little onion powder, dried minced onions, or 1 small onion chopped if desired but optional) Pour mixture over a 13 by 9 pan lined with a single layer of tater tots. Sprinkle shredded cheese to cover it all and bake at 350 degrees for about an hour.

You didn't specify meal or dessert. These are our fav cookies. They are moist and crispy chewy, delicious! Even people who don't like coconut love these.
Aunt Barbara's Coconut Macaroons
3 c flaked moist coconut ( like mounds brand)
2 eggs
1 c sugar
1/4 c flour
1/2 tsp vanilla
1/2 tsp lemon juice
That's it. Just plop it all in a bowl. All other macaroons you have to separate the eggs and beat the whites and all that bother and they don't even taste as good as these. Just stir it all up until it's mixed. Drop on greased baking sheets. Bake 350 for 17 mins until they get lightly browned around the edges. Take them off the sheet as soon as possible and spray the spatchula with pam. These are best eaten fresh. For Christmas I put a red hot candy in the center of each before baking. Hope this helps.

Swetish Meatballs (why, because I get into trouble if I don't bring it to a get together!)
Meatballs-I tell everyone to make up their own mix, or grab some frozen ones at the store. You need at least 3 pounds of them. I have done both, homemade and frozen, the sauce is the best part!
1 large can cream of mushroom soup
1 8 oz container sour cream
1/2 cup milk
2 tbsp worshire sauce
1/2 tsp pepper
1-2tsp garlic powder (depending on personal taste for garlic)
Mix soup, sour cream, milk, worshire,pepper and garlic powder in sauce pan until heated through but do not boil. Pour over meatballs in crockpot. If you used homemade meatballs, they should be cooked before placing in crockpot, if frozen then you can place them in the crockpot frozen the pour sauce over them. Cook in crockpot on high for 1.5hours, then turn to low for 4 hours. Serve with hot buttered pasta of any kind.

BROCCOLI CASSEROLE
1 can of Cream of Mushroom Soup
1 jar of Cheez Whiz
1 stick butter
1/2 cup of chopped celery
2 Tbls. minced onion
1 bag chopped broccoli
2 3/4 c. instant rice
Melt butter, soup and cheez whiz until soupy. Add celery, minced onion and broccoli. Stir well. Add instant rice. Pour in baking dish and bake on 350 for about 20 - 25 min. or golden brown and bubbly.
This is my aunt's recipe and we have always fixed this dish. When we have a family get-together and holiday, they ask me to fix Broccoli Casserole. This is really easy to put together and so good.

Fettuccine in Alfredo Blue-Cheese Sauce with Crispy Bacon Bits(Danish Blue/Any other blue-cheese and Parmesan with double-cream and herbs and garlic).
See recipe. I added the 'crispy bacon bits' to it. At the stage where you fry the garlic, cut up a pack of smoked, dry-cured, back bacon and put it in the skillet/frying-pan with the garlic. Fry until brown and crispy.
I also use larger quantities of cheese. 50g Parmesan and 100g blue-cheese.
The dish has loads of flavor with a lovely creamy sauce.
Serve with a nice red-wine. Your favorite red, Italian red, french claret or Spanish rioja.
The sauce is also great with steak and fries or lamb-chops and rice.

My Chili. The secret is sliced stewed tomato's and refried beans. Get a lean ground beef and slowly fry it with onions and peppers, then add chili seasoning, pinto beans, tomato sauce, half a can of refried beans (add more if you want it thicker) and the stewed sliced tomato's. Slowly cook for at least two hours, stirring occasionally.

i don't cook that often, but when i do, i always get rave reviews for my fried pork chops. (i never use exact measurements, so i'll give general directions) ingredients: pork chops, eggs, milk, flour, salt, pepper, garlic salt, mrs. dash, vegetable oil. directions: put a cup or two of vegetable oil in frying pan, put on stove to get hot. in one bowl, mix 2-4 eggs & a few tablespoons of milk. in a second bowl, mix flour, salt, pepper, & garlic salt & mrs. dash. dip pork chops in egg mixture, then in flour mixture, make sure you completely cover it. cook in frying pan, turn them over frequently to prevent burning. it goes really well with mashed potatos, gravy, & green beans.

CHICKEN PICCATA -- simple, easy, no-fail, great for family meals or to impress guests!
2 skinless and boneless chicken breasts, butterflied and then cut in half
Sea salt and freshly ground black pepper
2 cups all purpose flour, for dredging
6 tablespoons unsalted butter
5 tablespoons extra-virgin olive oil
1/3 cup fresh lemon juice
1/2 cup chicken stock
1/4 cup brined capers, rinsed
1/3 cup fresh parsley, chopped
Season chicken with salt and pepper. Dredge chicken in flour and shake off excess.
In a large 10 or 12-inch skillet over medium high heat, melt 2 tablespoons of butter with 3 tablespoons olive oil. When butter and oil start to sizzle, add 2 pieces of chicken and cook for 3 minutes. When chicken is browned, flip and cook other side for 3 minutes. Remove and transfer to plate. Melt 2 more tablespoons butter and add another 2 tablespoons olive oil. When butter and oil start to sizzle, add the other 2 pieces of chicken and brown both sides in same manner. Remove pan from heat and add chicken to the plate.
Reduce heat to medium low and add the lemon juice, stock and capers. Return to stove and bring to boil, scraping up brown bits from the pan for extra flavor. Check for seasoning. Return all the chicken to the pan and simmer for 5 minutes. Remove chicken to platter. Add remaining 2 tablespoons butter to sauce and whisk vigorously. Pour sauce over chicken and garnish with parsley.

CHOCOLATE PUDDING CAKE -- simple, always have the ingredients on-hand, scrumptious!
3/4 cup of sugar
1 cup plain flour
1/4 teaspoon salt
2 teaspoons of baking powder
2 Tablespoons cocoa
½ cup milk
1 teaspoon of vanilla
3 Tablespoons melted, cooled, margarine
Sift sugar, flour, salt, baking powder and cocoa together in pan. Stir in milk, margarine and vanilla. Batter will look like brownie batter. Spread batter into greased baking dish.
TOPPING:
½ cup of granulated sugar
½ cup brown sugar
1/4 cup cocoa
Mix topping sugars and cocoa together and sprinkle dry ingredients over batter.
Pour 1 ½ cups of tap water over all. DO NOT STIR.
Place in oven and bake at 350 degrees for 45 minutes or until topping is done.
(In the baking process, ingredients will reverse themselves - finished product will look like a brownie on top and have chocolate pudding on bottom. Serve in bowls with spoons.
Serves 6-8 people. Good with vanilla ice cream or cool whip.
