I believe my father may have married on board a ship leaving Southampton for Canada, where he was migrating, and am trying to find out what the ceremony would have been like together with where I could trace any such records without knowing the name of the ship.

Captains of ships can legally marry 2 people.
Information about the marriage would be in ships log.
With a little digging you should be able to find out the ship's name. When did your parents arrive in Canada? You must know the time of year, the year, etc.

Its always being possible to get married on board ship.. The captain is deemed to be a fit and proper person entrusted with the legal right to perform civil marriage ceremonies

I beileive it is still possible to get married on baord a ship, and I think if you check with Southhampton docks they will be able to tell you where you can get passenger manifests from as all ships have to have a passenger manifest, hopefully it will help you, the ceremony, will be recorded I would have thought in a similar place but I am by no means an expert

I believe the Captain or a chaplain could perform the ceremony. Not knowing the name of the ship leads you pretty much no where. Try the library, ask for help.

The Captain of a ship had many attributes which include
death certificates, marriage, birth etc., which must be
reported to the authorities upon arrival at the nearest
port. I don‘t know what the legislation is now concerning
a marriage, but death and births continue to be his duty.
