Serves: 4-6
Instructions
Gently fry 1 chopped onion, 2 grated carrots and 1 crushed garlic clove in a little butter for 5 minutes. Add 115g chestnut mushrooms, finely chopped, and cook, stirring frequently, until soft.
Remove from the heat and stir in 175g cooked brown rice, 115g brown breadcrumbs, 55g each of finely chopped almonds and Brazil nuts, 115g grated Cheddar cheese, 2 medium eggs, beaten, 1tbsp each of chopped fresh oregano and basil, salt and pepper.
Bake in a greased 900g loaf tin at 180ºC, gas mark 4 for 1 hour or until browned and firm. Serve hot or cold with fresh tomato sauce.

HARVEST NUT ROAST
Saute in 3 tablespoons water and 2 tablespoons oil:
2 1/2 c. chopped celery
3 med. onions, chopped
Then combine with:
3/4 c. walnuts, chopped
3/4 c. pecan or sunflower meal
1 1/2 tsp. salt
2 - 2 1/2 c. soy milk
1 1/4 tsp. sweet basil
1/2 tsp. sage
3 c. bread crumbs (add last)
2 c. cooked rice
Place in lightly oiled loaf pan and bake at 350 degrees for 1 1/4 hours. Loaf may have to be covered with tin foil near end of baking if top begins to get too brown. Serve with favorite gravy.

I love nut roast. Though unfortunately I don't have a good recipe because I tend to just go to M&S and buy them!!

Christmas Whiskey Pecans recipe
The taste of these coated pecans is similar to a praline with just a hint of whiskey.
1 cup granulated sugar
1/2 cup evaporated milk
1/4 teaspoon salt
2 tablespoons bourbon
3 cups pecan halves
In a large, heavy saucepan, combine the sugar and evaporated milk and bring to a low boil over medium heat, stirring constantly. Cook until the syrup registers 240 degrees F on a candy thermometer or forms a soft ball when a little is dropped into a 1/2 cup cold water.
Yields 3 cups.
Remove pan from heat. Add the salt, bourbon and pecans and stir until the nuts are thoroughly coated with the syrup. Pour the pecans onto wax paper and cool completely before storing in an airtight container.

Deviled Pecans recipe
6 tablespoons butter or margarine
1 teaspoon garlic salt
1/2 teaspoon salt
1 teaspoon chili powder
4 cups pecan halves
Melt butter or margarine; add salt, onion and chili powder. Stir in pecans, coating well. Spread on a 15 x 10-inch baking pan. Bake at 350 degrees F for 20 to 25 minutes.
Drain and cool on paper towels.
Makes 4 cups.

WTH is a Nut Roast? Do you put nuts in a beef roast or something? Coat it in crushed nuts?! I have no clue.
