I'm making shrimp and scallop risotto and it calls for clam broth, but I cannot find that anywhere!! Can I use chicken broth instead?

You could absolutely use chicken broth, although the flavouring of the risotto will be different than had you used clam broth. Personally, I'd use a vegetable broth instead, as it tends to have a more neutral flavour that will work with the shellfish better than chicken will.

Alternatively, making a clam broth from scratch is fairly easy - and if you do that, you can add the freshly cooked clams to your risotto as well - yum!

Look for clan juice at your grocer on the sam3e shelf as all the canned meqats and tuna are found. I've never had a hard time finding it. But, yes you can substitute chicken broth if you like. Or wou could try making a fush stock yourself.

i'm a large fan of cooking with beer, yet not for a white clam sauce. you may only miss the wine and upload a touch squeeze of lemon juice if it is not already contained in the recipe.
