the earliest i'd reckon is "clubbing" used by the earliest of men who fought and defended themselves from each other, and wild animals with thick sticks, or clubs. those who became skilled with clubs were designated hunters of the tribe when food was aplenty (later as warriors, when tribe wars began, for want of preferred territories, hunting grounds, etc.).
why, even cain killed abel with a blow to the head using a club..

Early human societies tended to be very group-oriented....inter-group conflict was usually handled with wrestling/grappling skills. The idea being to force your opponent to submit.
You didn't want to permanently injure the guy that hunts next to you...you might need him to help keep the group fed/alive.

The earliest I have seen is evidence of boxing. Except back in those days you sat opposite each other and beat the cr*p out of one another. Apparently it was not unusual for boxers to die buring matchups.

fighting has been around forever. But you can't really determine when a set system of Martial arts or Fighting came about.
