Helen Keller was blind and deaf, but she wrote this line. Amazingly, Helen Keller was able to over come her disabilities and become a wonderful and inspirational philosopher and observer of life.
In my view, and I may have read this long ago, I believe she is referring to the senses, like sight, hearing, touch, taste and smell. She is saying that the essence of life can not be understood through the senses. (don't take that literally necessarily) The essence of life is know in some other way, speaking indirectly because without the senses, we don't experience anything.
So, how do we know anything some other way? My answer is that knowing sometimes comes in stages like a learning process but at some point without proof necessarily, we come to know something is true. This is a very good example of faith.
So, by having faith, you can see in the dark, hear when there is no sound, taste without using your mouth or nose and so on.
Faith is then a form of knowing. You can not prove it, but there is a higher purpose of knowing than just cause and effect and it is called the transformational.
The classic view of transformational is the catapiller that weaves a coocon around itself and then inside, out of sight almost totally changes form and emerges later as a butterfly.
It is also part of the jesus story. Jesus dies on the cross, but he lives again in a different form which is the bases of the idea of Christianity. Jesus was a man, and died as a man, but then he became a spirit, the Son of God, transformation.
This truth can not be sensed, it can alone be known by faith. Their is no earthly proof of the essence of the story of Jesus.
