A person who is learning a new job, and who likes to know the expected end result of every task.

It means, he has a goal ( something to work towards), for instance my goal is before I die to see the Pyramids and the Taj Mahal. So, if there is a Trainee and his goal might be to contribute something to the firm he works for to make it more profitable, or if you work for Loss Prevention, my goal is to close all the holes so there will be no theft possible.

A trainee is someone who is being trained to do a job.

To be goal-oriented is to set goals for improvement and then work towards them - try to move things ahead and make them better.
