I have started a group at my school that raises money for more eco-friendly things.
We give prizes for recycling.
We persuaded the school's lunch trays to be recycled.
We persuaded our school to use environment friendly paper towels.

Should be proud of yourself for initiating such a good group! That's so wonderful! Congratulations!

Some thoughts...
Maybe persuade that the lunch room food comes from local places (less transport)...what about healthier, less pre-made or packaged food? What about organic? Have everyone watch the documentary "Super Size me" and "The future of food"

Encourage carpooling from the parents and/teachers.
Not knowing if you are in high school or grade school... what about organizing with teachers to have a class(es) about saving money which usually in turn is environmental...
eg. buying second-hand clothes, mending clothes, making used clothes into something else (purse from a cute top), preserving food at home, borrowing/ trading groups...
Does your school have Home Economics? (sewing and cooking) This would be a good place to start.
What about contests? Most inventive reduce, reuse, recycle.
Writing contest on something like...Can we live like great-grandma in today's age? How?
I really could go on but I don't know the limitations.

Good luck, I hope it works for you and you certainly have inspired me to become more involved with other people in this area of life (environmental)...meaning I've been doing what I can myself but it'd be nice to motivate others.

Make compost. You can throw in all the uneaten vegetables from the cafeteria, and also lots of paper, and even custodial stuff like chopped leaves. Then you can spread it on flowerbeds.
