my family is coming over for thanksgiving and they really like that soup but i dont know the resipte.do you know it?

Pumpkin soup

This pumpkin soup has a bit of Latin flare.

1½ hours 30 min prep

2 lbs pumpkin, peeled and seeded,cut into 1" cubes
salt
pepper
2 tablespoons butter
1 large onion, finely chopped
3 green onions, trimmed and finely chopped
3 tomatoes, skinned and chopped
1 cup coconut milk
1/4 teaspoon freshly grated nutmeg
1 pinch cayenne pepper
2/3 cup sour cream or yogurt

Put the pumpkin in a saucepan and add enough water to cover.
Add 1 tsp of salt and bring to a boil, lower the heat to a simmer for 20 minutes.
Drain and reserve the cooking liquid.
Melt the butter in a clean saucepan over medium heat.
Add the onion and green onions and fry them, stirring constantly until they are soft and golden, about 5 minutes.
Add the pumpkin, tomatoes, coconut milk, 3 cups of the cooking liquid, half the nutmeg, a pinch of cayenne pepper, salt and freshly ground pepper Bring to a boil, then lower the heat and simmer for 30 minutes.
Remove the pan from heat and leave it to cool slightly.
Puree half the soup at a time in a blender, then return to the pan.
Heat it through for 5 minutes.
Pour into warmed soup bowls and swirl a bit of the sour cream or yogurt in it and sprinkle fresh nutmeg on top Serve at once.

Jamaican Pumpkin Soup

My wife and I went to the Grand Lido Braco resort in Jamaica and as soon as we arrived to the property, the first thing I wanted to do was to eat some Jamaican food. They brought out some Jamaican Pumpkin Soup and it was great. Then, it was onto the Jerk Chicken w/ Rice & Peas. But that's for another time...Here's the soup.

4-8 servings 1 hour 30 min prep
1/2 cup chopped onions
2 1/3 lbs pumpkin (peeled and cut into medium to large diced pieces)
2 1/4 quarts chicken stock or vegetable stock (slightly over 1/2 gallon)
1 scotch bonnet pepper
3 sprigs scallions (cut thin)
2 garlic cloves, minced
1 bay leaf
2-3 sprigs fresh thyme, chopped
salt and pepper (to taste)
1/4 lb butter

Sauté onions in butter in a large pot until transparent. Add pumpkin and fill with stock. Add the remaining ingredients and bring to boil Put Scotch Bonnet Pepper in Whole). Simmer for about half an hour or to desired consistency. Remove Scotch bonnet pepper and serve hot.

Whatever recipe you choose I highly recommend adding a little maple syrup and nutmeg. Believe me it will make any pumpkin soup better. Same for banana and butternut squash, all of these should be interchangable in a soup recipe.

well there are several actually.

but first you need to open and clean your pumpkin, decide what meat you want to use lightly coat with olive oil season and fry till done add desired veggies (i use canned mixed cuz they have potatoes in them and one it's cooked for a while most can't tell) then pour into the pumkin place in oven on 350 for 1 to 2 hrs depending on size.

pumpkin, onion, garlic, ham for seasoning, after it is done nutmeg and salt and pepper....then heavy cream ...
