I agree with how you feel - everything seems so trite.
So depending who is asking, I try a variety:
How are you? - better, now that I'm talking to you
- fine, now, but you should have seen me a few minutes ago!
- top drawer (let them figure out why you say this)
- happier than a pig in ...........
- lousy, thanks for asking
- pretty grumpy
- well, I have my period, what does that tell you?
- tired of this whole human race thing
- tired - just so very tired

I don't have a problem with just saying "good" or "fine". However, if you want something that's cute, but doesn't weird people out too much, I used to know a guy who would often say "Stellar!" I think "capital" was another one of his responses.

I usually answer with what I'm doing. If the person knows me well enough to care about the answer, then what I'm doing would tell them how I'm doing and what kind of mood I'm in.

"How are you?"
"I'm cleaing my daughter's room."
"Ohhh, I'll leave you alone then and call back when you're in a better mood."

I respond truthfully, if I am good I respond "good/wonderful" if otherwise I say what's bothering me, like "not enough sleep" or too windy outside....

I commonly respond with 'you want the honest answer, or the diplomatic one?' I'll give you a wild guess which one they usually choose...

I used to say something like "Peachy" normally everyone knew to leave me alone, or "Grapey" if i was in a goofy mood, just things like that. I know it sounds corny but its fun.

If you want people to stop asking just say... "Well, to start with (insert all your problems here)." And justkeep going and going and soon you wont get asked anymore :-)
