what is the difference between 3.1 ch & 5.1ch ?

"DVD" can stand for Digital Video Disc, or it can stand for Digital Versatile Disc.

Audio with 3.1 channels means there is a left channel, a center channel, and a right channel, plus a sub-woofer. The sub-woofer is the ".1," as it contains all low frequencies.

Audio with 5.1 channels includes the above front channels plus a left rear and right rear channel.

By the way, the sub-woofer can be placed anywhere in the room; the human brain is not able to distinguish the direction of such low frequencies.

is a standard for surround sound. This means that the audio was recorded in 5 discrete channels, Center, Left, Right, Left Rear, and Right Rear. The 0.1 is the subwoofer. This is not included as a seperate channel because human ears cannot tell where bass is coming from.

A DVD is like a CD only it plays movies, and a DVD player is what plays movies. 3.1CH is referring to the audio, meaning it has 3 speakers plus a subwoofer, and the same for 5.1, only 5 speakers and a subwoofer.
