At first i thought ham but then i remembered ham is expensive. I would prefer something that doesnt cost too much and that can be made in a caserole dish and is easy to transport. I also have a crock pot so i could make something in there. I just don't have any ideas.

Wow so many great ideas, i had thought of meatballs but wondered if that was more of an appetizer. The frito pie sounds great but requires to many extras to be carried in extra dishes. I also never thought of sloppy joes that would be great. I forgot about baked ziti i used to make that and that was always good.

I have a great recipe for meatballs that are easy to prepare in a crock pot and they taste great. Buy frozen meatballs ( I buy a large bag at Sams Club) add a bottle of your favorite BBQ sauce, a cup of grape jelly and a bottle of cocktail sauce. Heat on low for 2 hours and get ready for a great party dish.

I am assuming that all parents are taking a dish so you could perhaps get away with a potato bake. All kids love it. It can be cooked and served in the same dish. Two or three layers of thinly sliced potato, onion (spanish onion is best for kids, its milder), bacon and cheese. Drizzle cream over the top and bake (moderate heat, it burns easily) until soft.
I guarantee the dish will be gone and a main course dish does not always have to be meat based.

This is a super fast, super easy, super inexpensive, super yummy casserole I take - Baked Ravioli

Buy 2 pkgs of frozen mini cheese ravioli.
1 Large jar of Prego spaghetti sauce
1 pkg shredded mozzarella cheese
(parmesian - can be added if you want it cheesier.

Layer in casserole dish - ravioli, sauce and cheese - you can usually get about three layers of this. Top with the last of the sauce and cheese. Cover with foil and bake in 350 oven for at least 30 minutes. Remove foil and bake until cheese is bubbly and slightly browned on top (about 5-10 minutes more).

It basically tastes like and looks like lasgne - but without all the trouble of boiling noodles, etc.

I would go with a chicken dish. If your son goes to public school he may have classmates with meat restrictions, which is more often pork or beef.
I do this chicken dish in my crock pot.
Place your chicken breasts( 3-4) in the crock pot, mix taco seasonings (2-3 packets)with your water(enough to cover chicken)
cook the chicken in the spiced water till it falls apart, I cook mine overnight if I need it early in the day.
cut chicken into bite sized pieces, and put it back into the spiced water, add 15 ounces tomato sauce, and 1 1/2- 2c
uncooked rice. Allow the rice to cook in the spice water when the rice is fully cooked serve with shredded chedder on the top, you can also serve with flour tortillias.

Quick, Easy -N- Fast Chicken Casserole Recipe

2 C. cooked, cubed chicken
2 C. chopped celery
1 C. chopped onion
2 T. chopped pimiento
1 t. salt
1/4 C. toasted almonds (slivered)
1/2 C. mayonnaise

Mix and spoon into casserole dish.

Top with:
1 1/2 C. shredded Mozzarella cheese and 1/2 C. crushed Ritz crackers mixed with:
1 T. butter or margarine

Bake at 350°F until crumbs are golden, about 25 minutes.


Quick, Easy -N- Fast Burrito Casserole Recipe

For the filling:
1 onion, chopped fine
4 garlic cloves, minced
3 T. olive oil
2 1-pound cans black, pinto, or pink beans, rinsed and drained
1 C. tomato sauce
2 t. ground cumin
4 fresh or pickled jalapeño chilies if desired, seeded and chopped
1/4 C. chopped fresh coriander if desired

twelve 7- to 8-inch flour tortillas warmed
1 1/2 C. grated Monterey Jack (about 6 oz.)
guacamole and tomato salsa as accompaniments

Make the filling:
In a large heavy skillet cook the onion and the garlic in the oil over moderately low heat, stirring, until the onion is softened, add the beans, and mash about half of them coarse with the back of a wooden spoon. Add the tomato sauce, the cumin, the chilies, and salt and black pepper to taste, simmer the mixture, stirring, for 3 to 5 minutes, or until it is thickened slightly, and stir in the coriander.

Working with 1 warmed tortilla at a time and keeping the others covered, spread about 3 tablespoons of the filling down the center of each tortilla and roll the tortillas, enclosing the filling but keeping the ends open. Arrange the burritos, seam sides down, in one layer in a baking dish, sprinkle them with the Monterey Jack, and bake them, covered with foil, in the middle of a preheated 350°F. oven for 10 minutes. Serve the burritos with the guacamole and the salsa.

Makes 12 burritos, serving 6.


Pizza Noodle Casserole

8 oz. noodles, cooked and drained
1 pound ground beef
1 tbsp. oil
1 can (4 oz.) mushrooms, drained
4 oz. pepperoni, chopped
1 can (15 oz.) pizza sauce
2 cup cheddar cheese
1 cup mozzarella cheese, shredded

Preheat oven to 375° F.

Brown ground beef in oil. Mix in mushrooms, pepperoni, pizza sauce and cheddar cheese.
Put cooked and drain noodles in greased baking pan. Pour sauce mixture over the noodles and top with mozzarella cheese.

Bake 30 - 25 minutes or until hot and bubbly.
Serves 6

A pasta dish is inexpensive, impressive, easy to make and popular. Try Penne with some ground beef and tomatoe sauce. Sprinkled with cheese while still warm. A complete crowd pleaser.

Sloppy Joes, they are inexpensive to make, cook well in the crock pot and kids love them.

Mac and cheese also is a big hit with kids.

What about fixing for Frito pie? Then you could make a pot of chili in the crockpot, bring Fritos, lettuce, tomato, grated cheese, chopped onions and each could fix their own bowl!

Kids like lasagna. I thought ham too, but kids are picky.
