About 12 oz. macaroni (In Trinidad, the macaroni, while hollow, is long, like spaghetti. I suppose real macaroni pie uses this kind, but I was never able to find it in the United States. I found that other types of macaroni, like elbow macaroni, worked just as well.)
- 2 vegetable bouillon cubes (I use this to add to the water in which I boil the macaroni. I think it just adds a nice flavour.)
- 1 14 oz. can cream-style corn
- Grated cheese -- lots of it! (I use New Zealand white cheddar, mainly because it's the most commonly found cheese here in Trinidad. Outside of Trinidad, however, a medium or mild cheddar works fine. As for the quantity -- seriously, you can't over-cheese this recipe. I'd start with something like 3 cups, and adjust as you see fit.)
- 1/2 large onion, grated
- 2 eggs
- 3/4 cup of milk
- Tony Chachare’s Creole Seasoning, or if none available, salt and black pepper, to taste
- Bread crumbs
- Butter
What you'll do:
1. Preheat oven to 350 degrees Farenheit.
2. Boil macaroni until quite soft, adding the bouillon cube to the water.
3. In a large mixing bowl, beat eggs well.
4. Into the mixing bowl, add the drained, cooked macaroni, the grated onion, almost all the grated cheese (reserving about 1/4 cup of the cheese for the topping), the milk, and the seasoning to the eggs. Mix well.
5. Pour the mixture into a casserole dish (I used a 3-quart Pyrex dish). Top with remaining cheese, breadcrumbs, and dot with butter.
6. Bake at 350 for 30 minutes, until nice and bubbly.

Done, Gone, Mac & Cheese
5 C Lrg. Elbow Macaroni
1/2 lb. Sharp Cheddar Cheese, grated
1/2 lb. Longhorn Cheddar Cheese, grated
1/2 lb. Mexican Ranchero Cheese, crumbled
1 C Milk
1 1/2 C Crumbled Cheeto’s
Cook the Mac al dente, not quite done
Combine all the Cheeses
Layer Cheese and Mac, Cheese and Mac, (you get it)
Pour in the Milk Top with Cheeto’s
Bake 45 min. @ 350
Footnote: This also is good with chopped Ham mixed with the Cheese.
Kids love it with Hot Dogs on Top, put them on top the last 15min.

Cook elbow macaroni according to box directions. Drain. Poor back into pan.Melt 1/4 cup of butter by adding to the macaroni in pan and stirring thoroughly. Add shredded cheddar cheese or shredded sharp cheddar (or a mixture of both) to your liking. (Some people prefer "cheesy" mac-n-cheese). Enjoy!!
Doesn't get any easier than this!

The best is to make a simple rue and add cheese
Rue: melt tbsp or so butter then slowly add about tsp flour stirring constantly. Add cup of milk (warm it up a bit in the mike or a saucepan) add some pepper, then add about a cup of cheese let it thicken and voila pour over elbow, bow tie whatever you like. This should only take about 15 - 20 min tops

MACARONI AND CHEESE
When preparing the following pastas in advance (up to six hours), keep them covered and chilled and then let them come to room temperature before baking.
7 tablespoons unsalted butter
1/4 cup plus 2 tablespoons all-purpose flour
4 cups milk
1 1/2 teaspoons dry mustard
1/8 teaspoon cayenne, or to taste
1 pound elbow macaroni
3 cups coarsely grated extra-sharp Cheddar cheese (about 12 ounces)
1 1/3 cups freshly grated Parmesan cheese (about 4 ounces)
1 cup fresh bread crumbs
Preheat oven to 350°F. and butter a 3- to 4-quart gratin dish or other shallow baking dish.
In a heavy saucepan melt 6 tablespoons butter over moderately low heat. Add flour and cook roux, whisking, 3 minutes. Add milk in a stream, whisking, and bring to a boil, whisking. Add mustard, cayenne, and salt and pepper to taste and simmer sauce, whisking occasionally, until thickened, about 2 minutes.
In a kettle of salted boiling water cook macaroni until just al dente, about 7 minutes, and drain well. In a large bowl stir together macaroni, sauce, Cheddar, and 1 cup Parmesan and transfer to prepared dish.
In a small bowl stir together bread crumbs and remaining 1/3 cup Parmesan and sprinkle evenly over macaroni. Cut remaining 1 tablespoon butter into bits and scatter over topping.
Bake macaroni in middle of oven 25 to 30 minutes, or until golden and bubbling.
Serves 6 to 8 as entrée or 8 to 10 as a side dish.

wow great answers.... so i wont add my own....lollllll but i jsut wanted to say to Teppes....... wowwwwww what a neat and different recipe style for mac and cheese.... i myself am going to try it..... also.... you are right about adding spice or flavorings into the water as the noodles boil.... it gives the noodles a lil lift in flavor.
To the person who asked the question.... i have made mac and cheese homemade many times.... and i find that the fastest and tasty stove top cooked kind is the one who posted ground mustard seed in the ingredients list.... ground mustard adds that lil zing that makes it very tasty ... great question and very good answers....

Homemade Macaroni & Cheese
Serves: 4
Prep. Time: 0:45
1/4 cup butter OR margarine
1/2 sm. onion - minced
1/4 cup all-purpose flour
1 3/4 cups milk
8 oz. process American cheese food (Velveeta®) - cubed
1 tsp. salt
1/4 tsp. ground mustard seed
1/4 tsp. black pepper
1 dash cayenne pepper
1/2 lb. elbow macaroni - cooked al dente
-Cook onions in butter until transparent.
-Stir in flour and cook for 2 minutes.
-Slowly stir in the milk.
-Stir in the cheese, salt, pepper, and mustard.
-Continue to cook over medium heat, stirring constantly, until thickened.
-Fold in prepared macaroni.
-Pour into a greased casserole dish and bake in a 400 degree oven for 25-30 minutes, or until the top is golden brown.

boil a medium box of macaroni, once it is done mix in a bowl with 3 cups of shreddded cheddar cheese , 2eggs,1cup of milk,t. of salt,pour in casserole pan use i cup shredded cheddar on top bake at 375 for 30-35 min.

try adding small cubed ham in with your mac and cheese. or add corn or canned veggies with it . i use cubed ham and diced can potatoes in mine our add hamburger . which ever you like . quick easy and simple .
