You need this foolproof, simple, no cook fudge recipe. I have won candy contests with this. Everyone thinks good fudge is so hard to make. Good fudge is easy:

1 can sweetened condensed milk.
1 bag chocolate morsels.
1/4 tsp vanilla extract.
1 cup or so of chopped almonds, walnuts, or cashews (optional).

Put the milk and the chocolate chips in a microwave safe dish. Nuke it for a minute or 2, just until the chocolate is melty. Stir thoroughly. Add vanilla and nuts. Stir. Pour into a shallow square dish lined with wax paper. Place in the 'fridge or freezer until hardened. Remove from pan and cut into bitesize squares. Sit back and let folks think you spent all day in the kitchen cooking fudge. Tell no one how easy it really was.

Five Minute Chocolate Fudge

INGREDIENTS:

2 Tbsp butter
2/3 cup evaporated milk
1 2/3 cups sugar
1/2 tsp salt
2 cups miniature marshmallows
1 1/2 cups semisweet chocolate chips
1 tsp vanilla
1/2 cup chopped pecans or walnuts

PREPARATION:
Combine butter, milk, sugar, and salt in a saucepan over medium heat. Bring to a boil; cook 4 to 5 minutes, stirring constantly. Remove from heat. Stir in marshmallows, chocolate, vanilla, and nuts. Beat for about 1 minute, or until marshmallows melt and mixture is thoroughly combined.
Pour into an 8-inch square buttered pan and cool. Cut fudge into squares.

Fudge is a delicious combination of sugar, butter, milk and flavorings such as chocolate, maple, peanut butter, white chocolate, butterscotch, walnut or even pumpkin. The tricky part of making fudge is combining these items and cooking them properly to make a smooth, creamy, firm but pliable finished product.

The primary tip for good fudge is to follow the directions exactly.

Add each ingredient in the order listed by the recipe. Don’t attempt to achieve smooth fudge with vigorous stirring after it’s reached the soft-ball stage: stirring at the wrong time can actually promote crystallization of sugar into large grains.

For best results, use a heavy, high-sided saucepan that holds about twice the volume of your fudge recipe.

Good Luck.

Chocolate Fudge

Ingredients:

2 cups sugar
1 cup whipping cream
2 ounces butter
3 tbsp. water
1/2 cup milk
8 ounces semi-sweet chocolate

Preparation:

Put the sugar, cream, butter, water and milk into a heavy pan and place over a low heat. Stir until the sugar is completely dissolved.
Break the chocolate into small pieces and put into the sugar mixture, still on the low heat and stir until it dissolves. Once dissolved, turn up the heat and bring the mixture to the boil. It should now boil, with an occasional stir, until it reaches 240°F (114 deg C), the soft ball stage. (When a teaspoonful is dropped into a saucer of cold water, it forms a soft ball)
Remove from the heat and beat the mixture with a wooden spoon (best done by an adult) until it thickens. Pour the mixture into an 8 inch square cake pan greased with butter. Leave to set.
Cut into small squares.
