At our schools, the room moms are in charge of 2-3 room parties per year.
At my daughter's school we plan a Winter Party (games/snacks/craft) and a Valentine's Party (games/snacks/craft) and organize snacks for a Grandparents/Special Older Friend Day.
At my son's school, we play a Harvest Party (games/snacks/craft) and a Valentines Party (games/snacks/craft).
This isn't an official "room mom" job at our schools, but teachers always need parents who can volunteer to help in the classroom too, so talk to the teacher. (Especially with the lower grades.) Sometimes it's "busywork" like copying or cutting out stuff and other times it is working with small groups of kids. And of course there are field trips that need chaperoned. Don't be surprised if the school requires a background check before you can volunteer.
ETA:
If the room mom is to be in the classroom daily, then you'll probably do a lot of the "busywork" for the teacher like copying stuff, making journals or books for the kids, cutting out stuff, etc. And working with small groups of kids, walking around the room while they work to check their work or to be available if help is needed, helping sound out words, passing out papers, collecting papers, helping transition kids from one activity to the next, etc.

I am surprised to hear that you would be required to be in the classroom everyday. That would be a busy schedule for you. I was a room mother for my daughter's class in kindergarten and again in the second grade. I helped out in the classroom a couple days a week, helping the children with their daily work assignments and arts and crafts. I was responsible for planning their parties, and calling other parents to volunteer when needed and asking for goodies for the parties. I also called parents for the fund-raisers throughout the school year, asking for volunteers or contributions. It was a rewarding experience for myself and my child. I got a chance to share in her day and be a part of her classroom acitivities. The only downside would be that your child may not get the chance to bond with her teacher and other children if you are constantly in the classroom. Children need to bond with other people and learn that separation from us for a few hours can be a positive learning experience and create independence. If your child is clingy with you, then you being in their classroom may not be the best idea, as it does stiffel their independence and their self-confidence can suffer. My child was very independent from the get-go, so my being in the classroom did not change her personality, or attitude at all. She has always been very social with other people, adults included. If you child is very social, confident and independent then I would highly recommend it!

It depends on the teacher and the school. I was a teacher and my room mom used to meet with me before our parties. She would contact parents to send in goodies or supplies. Sometimes she would organize crafts or centers or I would. She would also find out which parents were interested in volunteering or chaperoning on field trips. One negative that a room mom told me, was that not all parents want to participate in sending things in. The night before the party, she felt obligated to go to the store and buy everything that was needed. I felt awful when I heard that!

Where I live, room Moms are not in the classs everyday but they do organize class events.

You pretty much just help plan and present the little room parties for Halloween, Christmas, and something else.
