Since food from Quebec differs greatly from elsewhere in Canada (just as New Brunswick is different from Saskatchewan), the correct term would be Quebecois cuisine (In correct French, it would be "cuisine québécoise"). However, I don't think that is a term that is as well-known as French Canadian cuisine. I would recommend you use French Canadian cuisine for your essay.

It is not French cuisine, people from Quebec have evolved their own style of cuisine and have their own way of cooking. It is called Quebecois cuisine. The French Canadian culture have invented some interesting dishes, one called poutine which is a mixture of french fries hot gravy and cheese curds. Sounds disgusting and is to some but alot of us enjoy it. There is also a type of meat pie called tortiere (spelling?) which usually includes pork, beef and perhaps lamb meat in a pie usually eaten around Christmas. There are of course restaurants that serve more traditional French cuisine.

Québécois cuisine.

The French variety spoken in Québec is called "Québec French" and not "Québécois French."

And it's "Québec society."

***EDIT***
I guess Douglas has never heard of a Chicago Pizza or a Philadelphia Cheese Steak or Boston Cream Pie. They are not called American Pizza, American Cheese Steaks, and American Cream Pies. There's even Southern Cuisine. There's no reason to get political here.

Much as residents of Quebec are French Canadian, the food is also deemed French Canadian.
