Yes. Alcohol evaporates just sitting there, ever drank a beer you put in the fridge from the night before? Not only does it loose it's punch but it looses it's fizz too. Just remember, alcohol is a liquid at room temperature, just like water. When you add heat it will evaporate faster just like water.

25 years of cooking with wine, beer and bourbon tells me it is safe to tell you that when you cook with these spirits, the achohol does evaporate and you will taste the flavor of the liquid and food that is sold to eat is given to children so it is ok....lyons serves mushrooms sauted with wine and it is served to children..if there was alchol in it they would be committing a crime....
