This sounds like it could be an allergic reaction. Allergic reactions are hard to pin point, the only way you can tell is by experiementing and it looks like you have to a point. If it happens all the time then there is something in the wine that causes this reaction. Champagne is much different than wine in the way it is processed. It is less dence and much lighter. Many people are allergic to certian presseratives in wine. Many will get headaches due to the additives. It is knowing what is in it and what is causing it then you just avoid that additive. But like I said it will be by reading the label and then learning what effects you and what does not.
There is a compound in the skins of grapes that make many people get headaches and it is very common. Wines that contain
sulfites can also have reactions. These are more intense within red wines where champagne is made from light grapes and it is not as bitter because they dont let the skins set in the process as long. That is why light colored wines are less bitter tasting and more sweet, the skin is what is bitter and in red wines skins are not removed for along time.
The type of wines and quality might make a difference too

It does sound like an allergic reaction- and from what I've learned here, the nitrates are the usual culprit in such matters.
