It may not be as simple as some of the others, but it is simply the BEST!!! Delicious and well worth the effort, people will rave. It's delicious with or without frosting and great for parties.
MOTHER BERTA'S CARROT CAKE
3 medium-sized carrots, peeled
2 cups all-purpose flour
2 cups sugar
2 teaspoons baking soda
2 teaspoons cinnamon
1 cup corn oil
3 eggs, lightly beaten
2 teaspoons vanilla
1 cup chopped walnuts
1 cup shredded coconut (sweetened variety)
3/4 cup canned crushed pineapple, drained
Cream Cheese Frosting:
4 ounces cream cheese, softened
3 tablespoons butter, softened
1 1/2 cups confectioners' sugar, sifted
1/2 teaspoon vanilla extract
1 tablespoon lemon juice
1. Cut 2 carrots into 1-inch dice; place in a saucepan, cover with water and simmer until tender, about 10 minutes. Drain and puree in a food processor or blender. Set aside.
2. Grate the remaining carrot; reserve.
3. Preheat the oven to 350°F. Grease a 9x13-inch baking pan. Line the bottom with waxed paper and grease the paper.
4. Sift the flour, sugar, baking soda and cinnamon into a large bowl. Add the oil, eggs and vanilla; beat well. Fold in the carrot puree, grated carrot, walnuts, coconut and pineapple.
5. Pour the batter into the prepared pan. Bake until a toothpick inserted in the center comes out clean, about 1 hour.
6. Cool the cake in the pan for 10 minutes before unmolding it onto a rack, then let the cake cool completely.
7. Prepare the frosting: Mix the cream cheese and butter together in a bowl. Slowly add the confectioners' sugar. Stir in the vanilla and lemon juice. Frost the cake.
Per serving: 630 calories, 73g carbohydrates, 7g protein, 35g fat, 90mg cholesterol.

SIMPLY CARROT CAKE
3/4 cup oil
1 cup sugar
3/4 cup water
4 large eggs
1 box Duncan Hines spice cake mix
1 box vanilla instant pudding
1 teaspoon cinnamon
2 cups grated carrots
1 cup chopped nuts
Preheat oven to 350F degrees.
Cream oil and sugar, add water, eggs, then dry ingredients. Fold in carrots and nuts. Pour into a greased 9x13 rectangular pan or 2 9" round pans.
Bake at 350 degrees for 40 to 45 minutes or until toothpick inserted into center comes out clean.
Top with cream cheese frosting, simply super good!

Well if u use fresh carrots that have been shredded in the cake it will be rich in flavor plus if u make it from scatch it won't have all the extra chemical added to the store cake mix to preserve it plus who know how long the box has been sitting on the shelf in the store. You can also use the box cake mix if u prefer that, but it may not taste as good as from scatch. plus if you don't have the patience like me i would use the store mix because u only have to add essential items ( water, eggs,oil) Also best icing to go with cake would be cream cheese and top with leftover shredded carrots

Buy a Betty Crocker or Duncan Hines Carrot Cake or Spice Cake. Follow the directions and then add a cup of freshly grated carrot(keep them short) and a handful or two of raisin or chopped dates before pouring into the pan and baking. This is an easy cheat to make your family think you did it all from scratch.

Carrot Cake?? Forget the carrot cake!! Girl, do I have a cake that will be raved about for weeks!!! I kid you not. I made it once for my home, my boyfriend went to his college class and bragged and so I had to make one for his college class. There was a woman there that told me after I told her what it was made with said that she doesn't eat this kind of cake..and she said that I converted her! Here is it is...
Ingredients
1box of German Chocolate cake mix
1jar of either caramel, butterscotch, or fudge topping
1can of sweetened condense milk
1tub of whipped topping
6-8 bars of Skor
Make cake according to box directions. Let cool for 10 minutes, then poke holes into the top of cake about every 2 inches with wooden spoon handle. Pour the can of sweetened condensed milk into all the holes. Pour the jar of your choosen topping over the holes again. I have always used caramel. However I am very interested in the fudge. Set into fridge for at least 2 hours or overnight for better flavoring. Chop the Skor bars into pea size or smaller pieces either by placing them in a freezer bag and pounding on them with a hard object or chop them in a food processor. Frost the cake with the whipped topping and then top with the crushed Skor. ENJOY and reap the compliments! The title of this cake is Better-Than-Almost-Anything Cake. The name says it all! (The woman said she doesn't like German Chocolate, but she likes mine)
