Vegetable oil works fine, but peanut is the best way to go. It's a "high temp" oil, meaning it handles the temperature of a deep fryer without altering it's taste or burning. It also lasts longer than anything else. It's about 10 bucks a gallon, but it's worth it. Good luck!

vegetable oil is the best to use, corn makes everthing taste like fried tortillas (which are quite yummy), and canola is too thin and breaks down faster
