I don't think the Prophet Muhammad never had any symbols, but the flag of his Muslim army was a clear white flag. If any, the Prophet had a symbol on his ring, and it was the sentence "No god but God, Muhammad is His messenger".
Over the years, the Muslims around the world came to create symbols to associate an event or their history, or what supposedly is Islamic. In Arabia, they have the Arabic scimitar (a type of sword) as a symbol; the star and the crescent moon was Turkish; the color green was supposedly the color Gabriel usually wore when he visited the Prophet; and the Quran is now on the flag of Afghanistan.
So globally, we can safely say that the words "God is Great" and "No god but God, Muhammad is His messenger", the star and the crescent moon, the Quran, and the color green are acceptable symbols to any Muslim. Scimitars, kerises, lions, eagles, and anything else are just local symbols.

the moon with the star. One of there main gods before the conversion was the moon god. they still go by a lunar calendar
