I'm a low-carb lifer so I know what you mean when you say you want more crunchy foods!
Try making cauliflower popcorn. It sounds waaaay weird but is quite excellent. It carmelizes and actually gets crisp...

Celery with Alouette cheese, peanut butter or anything else you can fill it with.
Joseph's cookies... (I like the chocolate chip best. Shipping is free on $20.)

Murray and Voortman sugar-free cookies from the grocery store. In Voortman I like the 4 net carb large oatmeal cookie. In Murray I like the fudge dipped grahams.

Sami - various snacks...

Make pizza using low carb Flat-Out bread. It has a nice crisp crust.
Nuts... lots of nuts!
Pork rinds... If you can locate Jay's Barbeque flavor they're fantastic with no pork rind flavor. Readily available in the Midwest.
Old London Sesame Snack Rounds... There are some undesireable ingredients but they're great for special occasions.
My favorite is EatSmart Soy Crisps. Twenty have 6 net carbs and they're WONDERFUL with salsa, etc.

Another idea is to toast Sami bread until it's dark and crisp. Put anything you want on top!
If you don't have a local low carb store there are many places on the web where you can order these things and some are readily available in health food stores, organic section of largers grocery stores or even in diet sections of the stores.
Just Google "low carb food" and you'll find tons of sites. You might also want to check out the Weight Loss forum at About.com or some of the following...

Better than deep frying low carb tortillas have a handful of nuts for something crunchy.
Or microwave prosciutto. Just put between two paper towel and microwave for 50 secs based on a 1200w microwave.

Kimkins members are enjoying shirataki noodles -- cooked and sprinkled with soy or teriyaki? My sister stir fries the cooked noodles over high heat like stir fried rice.
We don't subtract fiber, but if you do then one serving is 4 carbs with 4 carbs fiber.
And I agree, low carb totally works!

Slice sweet potatoes thin and deep fry them like thick potato chips... and when you pull them out, sprinkle them with a little hit of cajun seasoning (like Creole Sparkle)
Stir fry any combination of meat and veggies... the possibilities are endless...
Ready for this recipe? SpongeBob Spaghetti Squash - lol
1 large spaghetti squash (about 3lbs) cut in half lengthwise
2 cups pasta sauce (from jar is fine)
1/4 cup grated or shredded parmesan cheese
Preheat oven to 350. Wrap squash halves in aluminum foil and place in baking dish. Bake 45 minutes. Warm sauce in saucepan. Remove squash from oven, open foil carefully, remove squash, scoop out seeds and discard. With large spoon, scoop stringly flesh into bowl and use two forks to pull apart so it separates into strands. Serve on plate topped with sauce and cheese.

I just do cauliflower for crunchy, as deep frying is off my list (unless I cheat).
