PORCUPINE MEATBALLS:
1 1/2 pounds ground beef
1 onion (chopped)
1/2 cup bread crumbs
1 egg
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon paprika
1/2 teaspoon chili powder (opt)
1/4 cup uncooked rice
thickened tomato sauce (or tomato soup)
up to 1/2 cup water
Combine first 8 ingredients and roll into balls, press into uncooked rice to coat. Heat sauce in pot and add porcupine balls. Cover and cook until done.

INGREDIENTS:
1 1/2 pound lean ground beef
2/3 cup long-grain rice, uncooked
1/2 cup water
1/4 cup finely chopped onion
1 teaspoon seasoned salt
1/4 teaspoon garlic powder
1/8 teaspoon pepper
1 large can (15 ounces) tomato sauce
1 cup water
2 teaspoons Worcestershire sauce
PREPARATION:
Directions for porcupine meatballs
Mix ground beef with rice, 1/2 cup of water, chopped onion, seasoned salt, garlic powder, and pepper. Shape porcupine ground beef mixture by tablespoon into 1 1/2-inch balls.
Place the porcupine meatballs in an ungreased 2-quart shallow baking dish. Mix the remaining ingredients and pour over the porcupine meatballs. Cover and bake at 350° F. oven for about 45 minutes. Uncover and bake porcupine meatballs 15 to 20 minutes longer.
Porcupine meatballs serve 4 to 6.

INGREDIENTS:
1 egg
1 cup water
1 envelope onion soup mix
1 1/2 pounds ground chuck or round
1/2 cup long-grain rice, uncooked
1 large can (15 ounces) tomato sauce
1 can (14.5 ounces) diced tomatoes with juice
1 1/2 cups water
1 teaspoon sugar
PREPARATION:
Beat egg lightly with water and 2 tablespoons of soup mix. Mix lightly with ground beef and 1/4 cup of the rice. Form into 12 balls; roll in remaining 1/4 cup uncooked rice, pressing rice into meatballs (rice makes meatballs look like porcupines).
In a 3- to 4-quart saucepan or Dutch oven, combine tomato sauce, tomatoes with juice, water, sugar, and remaining soup mix. Heat to boiling; place porcupine meatballs in sauce. Cover and simmer, stirring frequently, for about 45 to 55 minutes. Rice should be tender and puffed out a bit from porcupine meatballs.
