I've never heard of using vinegar to absorb paint smells, but WHITE WINE vinegar is what is used as a common household cleaner, so it'd probably be that one.
From personal experience, I haven't found anything that absorbs paint smells but time and open windows and door.s

I've never heard of using vinegar for paint odor. But one thing that works, (from experience) is a teaspoon of vinilla extract to one gallon of paint.

I don't know about vinegar, but I have used a saucer of milk here and there. I was told that a basin of water wotks too so I use both basin of water and saucers of milk.
The best thing to do is use water based paint.
