I've heard that white meat /white wine and red meat/red wine. True???

When eating white meat it is usually proper to drink a white wine and red with red. Myself personally will drink a good red with anything.
The flavors that they put off are meant to compliment each other in a sense that if your eating fish you don't want to drink a strong red wine and lose all the flavor of the fish to the wine. Drinking a red wine with red meat however is usually because the beef would hopefully be a fine flavorful cut and the wine compliments it splendidly. Especially if the food is cooked in its complimentary wine it is best to drink the wine to accompany the flavors the chef wanted to distinguish.

The white meat=white wine and red wine=red meat idea is a basic rule to fall back on. However, wine "experts" will often pair red wine with white meats and vice versa. There is no hard and fast rule.

People can and do drink whatever they like together. Some wines do taste better with certain foods than others. You will find though that even different wines of the same type of wine can vary greatly in their flavors. It's not easy to pair wine and food and really difficult if the wine is not one you have tasted before...hence the rule to fall back on....which is a good guideline when you aren't familar with the wine.

No, wine is best paired with foods that compliment it. Creamy, cheesy dishes do well with wines with some acidity. Wines with a lot of tannin pair well with high protein foods and certain varietals have notes and nuances, which match better will certain foods. There are a number of ways to pair wine and food so that the best flavors are brought out in each. Toss that antiquated rule, find a reputable wine retailer and let them assist in your food pairings. I think you will be surprised at the uniquely wonderful pairings they come up with.

Yes, that's part of wine etiquettes. red wine has less carb than white wine. Hence, when you are having red meat, you need to counter that with red wine. And vise versa.

I disagree with that convention. I drink the wine I wish to drink.

I think it's a bit old fashioned, like not wearing white after labor day or other such nonsense.

That is the conventional wisdom, but feel free to make your own choices...personally I like red zinfandel with pizza or a ham sandwich...
