We had a tasting yesterday with a potential caterer. Our dish was a chicken and roast beef. The roast beef seemed undercooked and bland. The chicken was pretty good. The potatoes were instant, and the vegetables plain but not bad.
The caterer was late meeting with us, then had no time to talk to us. I think he should have planned our meeting for a time when he was going to have time to talk.
How good should I really expect the food to be? I'm trying to get it around $10/plate (Iowa).

I wouldn't really on a caterer that was late to our meeting, and had no time to talk, to cater my most important event. If the caterer is not organized and professional enough to arrange a simple tasting, I don't think he could be counted on for a full wedding party.

Besides, instant potatoes.... blah!!!

Given that you are limiting it to $10 a plate that may be the best you will find. Most weddings are a minimum of $18 a plate going as high as $100 a plate. However, having said that, if this caterer was late and had no time to talk with you now, this will probably not improve the closer you get to your wedding day. You may not be able to find someone that will do it as low as $10 a plate but I would look for someone who will take the time to sit with you and answer your questions - which this caterer seemingly did not have any interest in doing.

Find a different caterer. Not a big deal the potatoes were instant, but you don't want your guests getting food poisioning because of food being undercooked. (veges. too)

Unless there was an emergency or some other happening had suddenly arisen, he should have taken the time you needed, since this was an actual appointment.

You will be disappointed with this caterer for your wedding.

I have never heard of ANY caterer having anything for $10 a plate...no matter what state you are in. You need a more realistic budget if you are planning a sit-down dinner (like $65-$85 a plate)...if you can't afford something that expensive, then you might want to look into having an hors d'ouvres reception. It will give your guests a ton of options and it will be MUCH cheaper than a sit-down or buffet dinner. It still won't be $10/person though.

It's pretty obvious you aren't happy with him....so don't settle on him! What you tasted at the tasting is what your guests are going to have at your wedding. Don't expect it to be any better than that.

We got our food for $11.50/plate, and that included the china, silver, etc....we had roast beef that was out of this world good, chicken that was good, mixed veggies, roasted red potatoes, etc.

I say no. You don't need gourmet food, but at least something along the calibre of restaurant food. Plus, his not having time for you just shows how much he doesn't need your business.
Are you in a big city, smaller centre, town, what...? Always found that the absolutely best food, without costing a lot, is from church groups - if you have any around you that do such a thing. And depending, on the numbers for the dinner.

I would go for a different caterer just because the food doesn't seem that great and he doesn't seem very organized. I'm sure you can do better for $10 a plate.

If I were in your situation I would keep looking for a caterer. I think it was very rude and disrespectful of him to not only be late to your meeting, but to not have any time to talk with you. These vendors are supposed to be professional, especially if they want to keep their business and he wont with actions like that. This is a special day for you and you need someone who will be willing to work with you to make a menu that is both delicious and affordable.

If you have that "not so great feeling" now, it will only get worse. He should have been at his best when meeting a potential client. Instant potatoes??? These dishes you describe are not difficult dishes, and should be easy to pull off. I would say no thank you, and look elsewhere.

Honestly, at $10 per plate, you probably aren't going to get the greatest food. For that price, you could probably do the meal yourself and have it taste much much better. You can often find local groups (especially ladies groups) who will prepare and serve the food in exchange for a donate to their organization. Most churches have women's groups like that. Something to look into anyway.
