Authentic Potato Soup

A large pot of cold water
4 large Idaho potatoes
2 ribs celery, coarsely chopped
2 carrots, coarsely chopped
1 small onion, chopped
1 medium-large onion, stuck with 2 cloves and poked through with a knife
sea salt and white pepper
1 dried (green) bay leaf
1/2 cup flour (2 ounces)
1 stick unsalted butter (4 ounces)

Preparation:

Cube the potatoes and add them to the pot of water along with all the other vegetables. Bring the mixture to the boil, and allow to simmer merrily for 30 minutes.

In a medium sized skillet, melt the butter and add the flour to make a roux. Stir constantly to remove any potential lumps and make a smooth paste. Continue stirring constantly until the roux turns VERY dark brown. BE CAREFUL NOT TO BURN THE ROUX or you have to start all over again.

Remove the pot from the heat and add the roux, stirring constantly. When the foaming subsides, taste, and correct the seasoning. Remove the bay leaf and the whole onion before serving.

Easy Potato Soup:
Boil cut up potatoes and onions in a pan of water. Touch of salt
Boil until potatoes are soft. Drain off 2/3 of the water. Pour in Milk. Add tons of butter. In a small pan, melt butter and add a little flour to it to make a paste like feel. This will make the potato soup thick. Add just enough. Add salt and pepper and eat.

This is the easy way. For beginners.

My Dad makes the BEST Potato Soup!
This is how he does it! (He just made it for me this past weekend when I visited!)
We made a LARGE pot for about 10 people and had a little bit leftover....

Peel and cut 5lbs of white potatoes and put them in a large stockpot.
Wash and dice 5 stalks of celery
dice 1 med onion (Add celery and onion to stockpot)
Cover with water. Water level should be a little bit past the potato level.
Add a can of evaporated milk, 1 stick of butter, salt and pepper.
Add about 1/4 cup of Coffee Creamer (The instant powder kind)
For a thicker base, Dad adds cornstarch that he's mixed with cold water. (Make sure you mix it up with no lumps before adding the pasty substance to your soup.)

Dad is not a big salt eater, so we always add seasoning salt and sometimes garlic salt to each individual serving.

This is the best soup ever! (However, I NEVER make it as good as Dad does!)

1 tablespoon butter
1 large onion, chopped
6 cups mashed cooked potatoes
2 (14.5 ounce) cans chicken broth
1/2 cup milk
DIRECTIONS
In a medium soup pot melt butter over low heat, and saute onions until tender. Stir in the mashed potatoes, and then slowly add the chicken broth. Stirring, add milk (use more or less to achieve desired creaminess). Cook until heated through and season with salt and pepper to taste.

8 pounds potatoes, peeled and cubed
1 small onion, chopped
2 tablespoons butter
2 cubes chicken bouillon
2 tablespoons dried parsley
6 cups water
2 cups milk
1/2 cup all-purpose flour
DIRECTIONS
Place the potatoes, onion, butter, chicken bouillon cubes, parsley and water into a slow cooker. Set on low and let cook for 6 to 8 hours.
At least half an hour before serving, stir together the milk and flour until no lumps remain, and mix into the soup. Cook for 30 minutes or until the soup is thickened.

1 cup chopped onion
4 cups cubed potatoes
2 (10.75 ounce) cans condensed cream of chicken soup
2 1/2 cups milk
salt to taste
ground black pepper to taste
1 teaspoon dried dill weed
DIRECTIONS
In a large saucepan, cook bacon until crisp. Remove bacon, and set aside. Drain all but 3 tablespoons bacon fat from the pan.
Brown onions in bacon fat over medium heat.
Add potatoes, and enough water to cover. Cover and cook until potatoes are tender, 15 to 20 minutes.
Stir together soup and milk until smooth; add to potato mixture. Heat, but do not boil. Add salt and pepper to taste, and stir in dill weed. Crumble bacon; stir in just before serving soup, or sprinkle on top to garnish.
