12 matzot
13 Tbsp. olive oil
1 1/2 lb. sliced onions
4 artichokes (or 2 80z pkg of frozen artichoke hearts)
Juice of 1 lemon + 1/2 cup lemon juice
6 cloves garlic, minced
3/4 tsp minced rosemary
3/4 tsp. minced sage
2 lbs. fresh spinach
1 red chili pepper minced
1/2 tsp. nutmeg
1 lb. sliced mushrooms
6 eggs
1 cup vegetable broth
PREPARATION:
1. Cover the matzot with water and let soften.
2. Saute onions in 3 Tblsp. oil until golden. Drain and set aside.
3. Prepare the artichokes by boiling with the juice of the lemon, quarter and saute in 3 additional tblsp.

oil and 2 cloves of the garlic, rosemary and sage and salt to taste. Drain and set aside.
4. Microwave spinach with as little water as possible until limp. Saute spinach in additional 3 Tblsp. olive oil and 2 cloves garlic, red pepper, nutmeg, and salt to taste. Drain and set aside.
5. Saute the mushrooms in the remianing oil adding the remaining garlic and salt to tast.
6. Preheat oven to 350 degrees Fahrenheit.
7. Grease a 9x13 pan.
8. Layer 3 matzot and then top with the onions.
9. Add remaining layers in this order
3 matzot
artichokes
3 matzot
spinach
3 matzot
mushrooms
10. Beat eggs and 1/2 C lemon juice and pour over the layers. Add enough broth to moisten well.
11. Bake for 30 minutes.
Serves 8 generously.
