CRAB-MEAT GRATIN
Can be prepared in 45 minutes or less.
2 tablespoons minced carrot
2 tablespoons minced celery
2 tablespoons minced red bell pepper
1 tablespoon unsalted butter
1/2 cup chicken broth
1/4 cup dry vermouth or dry white wine
1/4 teaspoon dried tarragon, crumbled
1/2 cup heavy cream
1/2 pound fresh lump crab meat, picked over (about 1 1/2 cups)
fresh lemon juice to taste
1/4 cup freshly grated Parmesan cheese
Accompaniment: lightly toasted thin French bread slices
Preheat broiler.
In a small heavy saucepan cook carrot, celery, and bell pepper in butter over moderate heat, stirring, 1 minute. Add broth, vermouth or wine, and tarragon and boil mixture until liquid is reduced to about 1 tablespoon. Add cream and boil sauce until thickened, 1 to 2 minutes. Stir in crab meat, lemon juice, and salt and pepper to taste and divide mixture between two 1-cup shallow baking dishes. Sprinkle Parmesan over crab mixture and set dishes in shallow baking pan. Broil gratin about 4 inches from heat 2 minutes, or until bubbling and golden, and serve with toasts.

1 pound white crabmeat
3 Tbsp. butter or margarine
1/2 c. finely chopped onions or scallions
1/4 c. finely chopped celery
1 heaping Tbsp. all-purpose flour
1 1/2 c. milk
1 egg yolk, well beaten
2 Tbsp. fresh lemon juice
1/2 tsp. prepared mustard
3/4 c. grated cheese (Cheddar or American)
1 small pinch ground nutmeg
3 Tbsp. bread crumbs
dash of white pepper
1/4 c. extra cheese
dash of cayenne pepper
dash of paprika
In a heavy saucepan, over moderate heat, melt butter, add onions and celery. Cook, stirring occasionally until onions are soft and transparent but not brown. Stir in the flour, blend well. Add milk, stir constantly until smooth. Add pepper, nutmeg, mustard, and cheese. Remove from heat.
Beat in egg yolk and add lemon juice. Add crabmeat and mix well.
Preheat oven to 375 ° F. Butter baking pan or individual baking dishes. Pour mixture into pan(s). Combine additional cheese and bread crumbs, sprinkle over the top of crab mixture, then add a dask of paprika. Bake for 15 to 20 minutes until top is au gratin, brown and crusty.

This is a variation on Almena's recipe, Countess of Carnarvon, grandmother of the present Earl.
Ingredients
1oz/30g butter
1oz/30g plain flour
1pint full fat milk
¼ pint double cream
4oz/113g gruyere cheese, finely grated
pinch ground cayenne
pinch ground cloves
1lb/455g freshly cooked white crabmeat
salt and freshly ground black pepper
4 tbsp fresh white breadcrumbs
For the melba toast
6 slices medium white bread
For the salad
dressed mixed salad leaves
Method
1. Preheat the oven to 200C/400F/Gas 6.
2. Gently melt the butter in a medium saucepan. Add the flour and cook, whisking for one minute. In a separate pan, heat together the milk and double cream.
3. Remove the butter and flour mixture from the heat and whisk in the heated milk and cream. Return to the heat, gently bring to the boil, then simmer, whisking for 1-2 minutes until thickened.
4. Add three quarters of the cheese, the cayenne and cloves and two-thirds of the crab.
Season.
5. Divide the remaining crabmeat between eight ramekins. Top with the crab and cheese sauce mixture, a sprinkling of breadcrumbs and the remaining cheese.
6. Place the ramekins onto a baking tray and bake in the preheated oven for 10 minutes or until bubbling hot and golden.
7. To make the melba toast, grill the bread on both sides until golden. Cut off the crusts and slice the bread in half horizontally, then into triangles. Place the bread back under the grill, cut side up until golden and curled.
8. Serve the crab au gratin with melba toast and dressed mixed salad.

King Crab Au Gratin

2 (6 ounce) packages frozen crabmeat
3 tablespoons butter or margarine
1 cup milk
3 tablespoons flour
1/2 cup light cream
1/2 cup chicken broth
3/4 cup shredded sharp cheddar cheese
1 (4 ounce) can sliced mushrooms, drained (I like to use fresh mushrooms and different ones at times to change the flavor of the dish)
2 grated onions
1 teaspoon salt
1/4 teaspoon paprika (I like szedged or Tones because the flavor is richer)
2 tablespoons white wine (optional)
1/4 cup fine dry breadcrumbs

1. Defrost the crabmeat.
2. Melt the butter in saucepan.

5. Keep stirring over a low heat to keep the sauce smooth and you want it to thicken.
6. Now add your cheese, mushrooms, onion, salt, paprika, and wine.

8. Now stir in the crabmeat gently.
9. Pour mixture into a well greased 1 1/2 qt/ casserole.
10. Sprinkle bread crumbs over the top.
11. Bake at 400* for about 10-15 min.
